oh you're so sweet! By white sauce do you mean like alfredo? Try this recipe by Giada De Laurentiis from Everyday Italian-she's my favorite!

Recipe for Pasta baked in white sauce -

Preparation - Medium
Serves 4 - 6

For the sauce

2 T unsalted butter
3 T flour
1/8 t nutmeg
salt and freshly ground white pepper
2 cups milk heated

For the pasta

1 cup grated cheese: Parmesan, Pecorino, Cheddar, BelPaese, Swiss
7 oz cooked ham, chopped
1/4 cup butter
salt and pepper
l4 oz short pasta (penne, ditali, maccheroni, ziti, mostaccioli, etc)

Method--
FOR THE SAUCE:

HEAT milk the milk in a saucepan or in the microwave and keep hot.

MELT the butter in a saucepan over very low heat till liquified and just bubbling.

REMOVE from heat making sure butter does not turn brown or burn.

ADD the 1 T of flour to the butter, stirring constantly with a wooden spoon till smooth - then slowly add the rest of the flour and stir till smooth.

RETURN to medium heat and add 1/4 cup of milk at a time. When milk is absorbed by the butter-flour mixture, add a little more increasing quantities as you go along.

ADD nutmeg, salt and pepper to taste and continue stirring with the sauce at a slow bubble till sauce has the consistency of heavy cream.

REMOVE from heat and keep warm until ready to use.

FOR THE PASTA:

PREHEAT oven to 400 degrees F. with baking rack 1/3 - 1/2 up from bottom.

COOK the pasta in about 6 quarts of boiling, salted water (about ten minutes).

RETURN the sauce to low heat and add the grated cheese, stirring until cheese is absorbed into the sauce.

DRAIN the pasta, pour out the pasta water, return the pasta to the pot. Pour in three-quarters of the sauce and mix it together very thoroughly. Add the chopped ham and mix again.

GREASE a large ovenproof dish with half the butter (or a t of olive oil), pour in the pasta, distributing it evenly in the dish. Pour over the remaining sauce and dot the top with butter.

BAKE in a preheated 400 oven for 20 minutes until bubbling and golden on top. Remove, rest for 5 minutes and then serve-.

PASTA

Ingredients:-
-Pasta (half a pan)
-1 tin Tuna
-Cheese to taste
-1 tin Sweet corn
-Virgin Olive Oil
-Oregano
-Pepper
-Water

Method:-
1) Add a "dash" of virgin olive oil and a generous pinch of oregano to a pan of water. Bring to the boil.
Add Pasta (two handfuls per person), be aware that pasta expands and that your pan is big enough.
2) Lower heat to a simmer. When the pasta is soft (about 20 mins), turn off the heat, drain the pasta, and leave in the pan. If the pan is not big enough to stir the contents, move the pasta to large mixing bowl.
3) Drain any fluids from the Tuna and Sweet corn cans, then add to the pasta. Stir to ensure the tuna breaks up. Add a sprinkle of pepper. Spoon onto plates. Grate cheese onto the top and serve.
4) Instead of Tuna and Sweet corn try these variations:
5) Sausage and Tomato (throw in a can of pasta sauce or canned tomatoes works too).

WHITE SAUCE

THIN WHITE SAUCE:

1 tablespoon butter
1 tablespoon flour
1/2 teaspoon salt
1 cup milk or 1/2 cup evaporated milk and 1/2 cup water

MEDIUM WHITE SAUCE:

2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 cup milk or 1/2 cup evaporated milk and 1/2 cup water

THICK WHITE SAUCE:

3 or 4 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1 cup milk or one half cup evaporated milk and 1/2 cup water

1) Melt butter in a sauce pan and whisk in flour and salt until smooth.
2) Gradually stir in cold milk, cooking over direct heat and stirring constantly until sauce boils; reduce heat slightly and continue to stir until sauce becomes smooth and thick.
3) When sauce thickens, simmer for an additional 10 minutes over very low heat, stirring occasionally.
4) Stir carefully to avoid lumps. If sauce becomes lumpy, use a stick blender or rotary beater to blend out lumps or else press through a sieve.
5) Wondra flour may be used to great advantage since this flour does not have a tendency to lump.

PASTA AND VEGETABLE CARBONARA

3 c Bow Tie Pasta -- Farfalle,
-6 Oz
8 sl Bacon
1 c Red Bell Pepper -- Coarsely
-Chopped
9 oz Frozen Cut Broccoli -- Thawed
-Do Not Drain, 1 Package
2 tsp Unbleached Flour
1/4 tsp Salt
1/4 tsp Pepper
3/4 c Half And Half
1/4 c Fresh Parmesan Cheese
-Grated

Cook the pasta to the desired doneness as directed on the package. Drain
and keep warm. Cook the bacon over medium heat, in a large skillet, until
crisp. Drain, reserving 1 Tb of the drippings in the skillet. Crumble the
bacon and set aside. Add the bell pepper and broccoli to the drippings and
cook for 3 to 5 minutes or until the vegetables are crisp-tender, stirring
frequently. Stir in the bacon and the cooked pasta. Cook 3 to 5 minutes,
over medium heat, or until thoroughly heated, stirring frequently. In a
small bowl, combine the flour, salt, pepper, and half and half, stirring
until smooth. Add to the mixture in the skillet and cook until the mixture
is thickened, stirring constanjtly. Stir in the Parmesan cheese.

This is kind of cheating, but quick. Melt a couple Tbsp of butter in a pan, toss in a lot of garlic and a package of sliced mushrooms (baby bellas are good). Saute that, then add a jar of roasted garlic alfredo sauce. Add some milk or cream to the jar and shake it up to get the last of the sauce and add it to the pan. Simmer. Toss with cooked pasta, garnish with fresh grated Parmesan or Asiago and chopped green onions or parsley or cilantro.

It looks like it came from a restaurant!

Tagliatelle con Salsa Vellutata di Aglio
(Creamy Garlic Sauce with Tagliatelle)
**if you can't find Tagliatelle use spagetti, angel hair or Fettucini)

One pound bag of pasta cooked as directed

2 tbsp unsaled sweet butter
3 garlic cloves, crushed
2 tbsp plain (all purpose) flour
half cup or 4 fl oz chicken stock
2 tbsp dry white wine
1 large egg yolk, beaten
2 tbsp lemon juice
4 tbsp double(heavy) cream, whipped until stiff
salt and fresh ground black pepper ( to taste )

Melt the butter in a saucepan and add the garlic. Cook for 2 minutes and stir in the flour. Blend in the stock and wine ; cook for 5 minutes until thick. Whisk half of the hot sauce into the egg yolk and stir back into the sauce. Add the lemon juice and fold in the cream. Season with the salt and pepper.

Pasta Hot Pot

Ingredients Method
short macaroni - 100 gm
boiled vegetables - 2 cups
onions - 1 cup, chopped
tomatoes - 1 cup, chopped
green chillies - 3, minced
ginger - 2 cm, minced
celery - 2 stalks, chopped
refined oil - 3 tbsp
chilli powder - ½ tsp, optional
tomato ketchup - ½ cup
salt to taste
For Sauce :
milk - 300 ml
butter - 2 tbsp
maida - 2 tbsp
cheddar cheese - 100 gm, grated
egg - 1, lightly beaten
butter - 1 tbsp, for topping
salt and pepper to taste

Cook macaroni as per the directions on the pack.
Heat oil, fry onion till light brown.
Add green chilies, ginger and celery and fry for 1 minute.
Add tomatoes, chili powder, ketchup, vegetables, macaroni and salt.
Mix well (add a little water or stock if necessary ) and remove from fire.
Pour in a greased baking dish.
Melt butter for sauce, add maida and fry till the raw smell is lost.
Add milk, and cook stirring till it just begins to boil.
Remove from fire, add ½ the beaten egg and ½ the grated cheese, salt and pepper.
Pour over the macaroni vegetable mixture.
Sprinkle remaining cheese on top.
Pour remaining egg over it.
Dot with 1 tbsp of butter and bake in a hot oven (200 C ) till brown on top. Serve hot.


Basic White Sauce


Preparation Time : nil
Cooking Time : nil
Serves / Makes : 1 cup

Ingredients
2 tbsp butter/margarine
2 tbsp flour
1/2 tsp salt
1 cup milk

Method
place butter/margarine in a dish and haet on HIGH for 20-30 seconds.
stir in flour and salt.
add milk,stirring until smooth.
cook on MEDIUM for 3 to 4 min.
and your white sauce is ready.

FETTUCINE ALFREDO

INGREDIENTS
10 ounces fettuccini pasta
1/2 cup butter
5 cloves garlic, chopped
1 cup heavy cream
1 egg yolk
2 cups freshly grated Parmesan cheese
2 tablespoons dried parsley
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic.
Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended.
Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta.



ALFREDO SAUCE


INGREDIENTS
3 tablespoons butter
8 fluid ounces heavy whipping cream
salt to taste
1 pinch ground nutmeg
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese
1 egg yolk
2 tablespoons grated Parmesan cheese
DIRECTIONS
Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

It just takes some cream and butter. If you're wanting a cheesy sauce add some grated parmesean or mozarella. Add spices you like....oregeno, garlic, and pepper are nice. Add some sauted shrimp, scallops, mushrooms, and maybe even some sun dried tomatoes. Think about the ingredients your wife really likes and try to incorporate them.

cook pasta strain add vegi oil to it so it dosent stick

in a fry pan add 1tbs butter cup heavy cream and a lil white wine

reduce the cream till it thickensadd some parm cheese add salt/pepper and herbs(thyme or parsley) and maybe a lil lemon add pasta and toss

im another frypan get it hot add melted butter and your(or her favoret vegi's) saute then add wine to deglaze at the end...then put around the top of your dish ;-)
