Please check the American Heart Association. A stroke is a blood clot that traveled to the brain/and/or a leaky blood vessel in the brain that displaces healthy brain (kills that site). Stroke is a silent killer and silent disabler of many people. Some people will recover from them, many will not---it depends on thier underlying health, age, level of disability prior to stroke, size of infarct area (dead brain tissue)---and how long until they received medical attention. Stroke can cause an inability of body to properly respond to normal messages such as swallow---or impair muscle function such as parlaysis, facial drooping etc...
I am sorry to hear about your Grandfather however, as it is never easy to see a family member appear to be suffering or in poor health. I hope your family is receiving the appropriate information about his condition and treatment plan.
Rehabilitation (if patient is stable and stroke is not advanced) for stroke victims can be a long process and may or may not be successful

Be bold and talk to his doctors and the therapists working with him. He should have a neurologist, pulmonologist, and speech pathologist working with him in addition to his regular doctor.
