1. You can use half and half, however the sauce will not be as thick. You would have to reduce it for a long time to get the same consistency.
2. Saffron has a really distinct flavor and because of its high cost sometimes tumeric is used as a substitute. You can try this or leave it out. I personally don't like saffron.

3 threads of saffron won't add that much flavor, they are mainly for color. Your sauce will be thinner using the half & half, but you can substitute 7/8 cup of milk plus 3 Tablespoons of butter for cream per cup of cream. There are 16 Tablespoons in a cup, so you would need 21 Tablespoons of milk plus 1 1/2 tablespoons of butter to equal 1 1/2 cups of heavy cream.

You can substitute the half and half. your sauce will be a bit lighter and a little thinner. (if you want to, you can thicken your sauce more this way:
take a heaping tablespoon of maizena, dissolve in a little cold water or milk, add to your sauce a few minutes before serving, stir well until it thickens, should not take more than a couple of muinutes.
As to the saffron, if you have ground CURCUMA in your spice rack, you can substitute it for the saffron, use no more than one or two pinches...or the flavour will be too strong....

I think you can't substitute the heavy cream. It is... well cream and it will definitely impact the texture.
I believe leaving out the saffron may also impact the color as well. What other ingredients are in your recipe.
Either way...could you save me some leftovers? :-)

sorry ! I do not know the name of dish you making. but, if you use the exact ingredients as told to you for the dish it would be advisable. as it may ruin the dish. as far as saffron is considered. it has no taste but definitely has a smell which is very nice....

Saffron is only a coloring agent. It has no taste.

The half and half will be less thick...however if you mix up some arrowroot and/or corn starch with some half and half, stock, water it will give it some of that thickness with much less calories, fat, etc.
I recommend start small, and add more as it thickens up.

There are lactose free cream. You can also make Alfredo pasta with milk instead of cream and lactose free milk are easy to find.
