I've never had it and want to try it. What are some good recipes?

its good if done right cut into 1/4" slices cover in bread crumbs fry in butter salt pepper to taste

Eggplant is sort of bland so using herbs and spices really makes this a good dish and my favorite is stuffed eggplant. Slice the eggplant lengthwise and scoop out a part of the center on each side. Fill with your favorite meatloaf mixture into which you have also put in the mashed eggplant contents you scooped out. Bake like a regular meatloaf and serve with your favorite tomato/spaghetti sauce over the top. Really simple and delicious and almost a complete meal in one serving too.

It is very bland--that's why you usually see it in highly-seasoned recipes. It absorbs flavors from the spices.
Google "eggplant recipes" and you'll find a ton of them!

If you've ever had zuchinni or some of the other squashes, you have an idea of the blandness...that's why they are so often served with sausage or a spicy batter and fried...however, they are very good for you nutritionally....sweet potato is probably the most nutritious however.
