The best fried chicken Ive had was deep fried first to brown the outside and then finished off in the oven it was sooo good! TRY IT OR ILL HUNT YOU DOWN!

Whatever seasonings you use (like salt and pepper, etc.), do this the night before so that the flavors have time to permeate the meat.
Pressure or deep fryers are really helpful for bone-in chicken. Skillet frying is a bit tough to handle if you are dealing with large pieces because it's hard to cook all the way through.
Coating ... a wash of scrambled egg with a dash of milk followed by rolling in flour. Lots of other coating mixes you can try from the grocery as well.

Season your chicken and let stand for at least 4 hrs or place in the fridge for about 2 hrs prior to frying. Make sure the oil is at maximum temp when you are ready to cook.

I dip my chicken in egg and then my flour mixture before frying. It gives it the nice crispy skin. Also seasoning is very important.

First I let my chicken soak in hot sauce for at least an hour. Then I dip it my flour mixture (flour and Tony Chechera's Cajun seasoning), dip it buttermilk, then dip again in flour mixture. It makes it crispier.
