"Easy Turkey Pot Pie" - 8 servings
2 (15 oz.) cans Veg-All Original Mixed Vegetables; drained
1 (10 3/4 oz.) can cream of potato soup
1/4 cup milk
1 lb. (2 cups) cooked turkey; shredded
1/4 tsp. thyme
1/4 tsp. pepper
2 (9") frozen ready-to-bake pie crusts
Preheat oven to 375*. In medium mixing bowl, combine first 6 ingredients; mix well. Fit one pie crust into 9" pie pan; pour vegetable mixture into pie crust. Top with remaining crust; crimp edges to seal, and slit top with knife. Bake for 50-60 minutes (on lower rack) or until crust is golden brown and filling is hot. Allow pie to cool slightly before cutting into wedges to serve.

Here's an easy sauce for leftover turkey. Serve over noodles or rice. You can add pimiento or cooked peas or carrots to the sauce for more flavor and color.
INGREDIENTS:
1/4 cup butter
1/4 cup flour
1 cup hot chicken broth
1/2 teaspoon salt
dash pepper
1 cup half-and-half
sliced turkey breast, about 12 to 16 ounces
cooked rice or noodles
1 to 2 tablespoons chopped toasted* almonds
PREPARATION:
Melt butter in a saucepan over low heat; add flour, stirring until smooth. Pour hot chicken broth into the flour mixture and stir until smooth. Add salt and pepper. Heat half-and-half in a separate saucepan or in microwave, then add to the thickened sauceCook over low heat for 10 minutes, stirring constantly. Serve sauce hot over sliced turkey breast and rice or noodles. Sprinkle with toasted chopped almonds if desired.
Serves 4.

Make enchiladas. Grease your pan. Dip your corn tortilla into hot water to make it flexible and then into enchilada sauce. (I use canned - Rosarita.) Place chopped turkey and a spoonful of leftover turkey in the tortilla and roll it up. Place in pan - when the pan is full smother with more enchilada sauce and cheese.
Other tips - when I'm feeling lazy, I just put a thick layer of enchiladas on the bottom, smother, add fillings and put another layer on top. Add whatever you want for additional fillings - sliced zucchini, onions, beans, sour cream, cheese.

Well with my leftover turkey I pulled the turkey into small strips and seasoned it with pepper and garlic than I mixed it with two eggs and scrambled the mixture in a frying pan than I poured my leftover gravy on top and it was absolutely delicious.

Turkey casserole, easy as can be. Cream of mushroom soup, frozen broccoli, chopped turkey, onion, a little breadcrumbs and top with shredded cheddar cheese. Turkey pot pie is a good one, too.

Make soup and add vegetables and rice.
Turkey Salad(you can put in on a bed of lettuce and tomato, you don't necessarily need to make a sandwich).
