Because when you eat sheep it's called mutton.
Mutton tends to be rather tough and chewy unless boiled in stew for quite a while. Adult sheep tend to be more productive to the farmer, producing one - or often two - lambs per year for slaughter plus wool. So the price of two tender lambs plus the wool exceeds the price of one chewy mutton... thus it's more economic to sell lambs as meat rather than mutton.

Old sheep are called mutton and it is stringy and smelly - not acceptable to today's taste. Lamb is much younger and succulent. Mutton is nice in Irish Stew and some curries call for mutton, but stick to lamb. Try it with rosemary and garlic ym ym.

Sheep meat is known as Mutton and it is eaten in many parts of the world.
Mutton takes a lot of cooking to soften it so it is easier to cook Lamb.
Thats the reason we eat it, but in many places they would laugh at us for it.

every one eats mutton whether they know it or not unless they butcher it themselves. Lamb just sounds better, would you eat mutton in resterant if they put mutton on the menu. Its all good when fixed right. GOOD EATING
