Oh boy, do I have cookie recipes!
I got one from the back of a book for Snickerdoodles. But it is for a very large batch, so you may need to cut down the portions.
2 cups shortening
3 cups sugar
4 eggs
Mix well
Sift together:
4 tsp cream of tartar
2 tsp baking soda
1 tsp salt
enough flour to stiffen the dough
Make sure the dough is cool. In fact, you might want to refridgerate for a while. Roll into walnut-sized balls. Roll each ball in cinnamon and sugar, then place 2 inches apart on ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes.
Enjoy!

Libby's has an excellant pumpkin cookie recipe. You can use canned pumpkin, which is really easy, or you can cook your own pumpkin - more time consuming, but a fun project to do with kids. The recipe is on the back of the Libby's label or on the Libby's website.
