It really depends on how big your turkey breast is and if it has been brined (marinated) before it is cooked. I'd recommend using a pop-up thermometer. You can buy them at the grocery store. Or use a meat thermometer to tell you when it's done. It needs to reach in internal temperature of 165. I have found that rubbing the skin with butter or oil will help it get crispy. Just make sure you don't cover it in foil or the skin will steam and will not be crisp.

I would look at the Reynolds Turkey Cook-in-bag for the number of hours based on the weight, then I would buy a Cook-in-bag size appropriate for the breast that you buy. I always do my turkeys in the bags, and they are moist with the skin is crispy. Don't see why the same wouldn't work for just the breast.

rub a really good butter seasoning mixture under the skin before you cook it then cover with foil till the last hour or so then remove the foil and let it crsp on the outside. the butter between the skin will act as a barrier so the breast wont dry out while your "crisping" the skin. good luck and happy thanksgiving to you.
