I live in Thailand now and sometimes miss a home cooked meal from Canada.

My grandmother used to make a delicious homemade chicken noodle soup, good for the body AND for the soul!

How can I make one?

Pieces of boiled chicken-shredded. Broth cubes in boiling water, and cooked springy noodles. Carrots and celery is optional! It is the best food ever.

I like using the chicken broth in a can, or cardboard container, like Swanson's. I'm not sure if they have that there. I also like white and dark meat, because it adds more flavor to your soup. Try adding breasts and thighs. Put the entire celery stalk in, an onion, quartered, and carrots. Cook until the meat in very tender..i like it when the meat starts to fall off the bone. Remove the chicken from the bones and return it to the pot. Add eggnoodles the last 10 minutes of cooking.

boil a couple of chicken breasts in 3 cups of water, add a piece of carrot, celery, onion, garlic, half a bay leaf, some thyme, pinch of sage, black pepper, and salt.. let boil till breasts are done.. Save water, strain out spices and vegetables.
chop up chicken, through back into soup stock, (add another cup of hot water, add 3/4 cup of any of your favorite noodles (whatever I have on hand in cabinet) throw in cup of frozen mixed veggies (the pea, carrot, green bean, corn mix) add a dash of worchestershire sauce, allow to boil/simmer for 20 min.. adjust seasonings (salt/pepper) and enjoy... mmmm!
