Semi sweet has the most cocoa in it. The melting points are pretty much the same, just make sure that your pieces are the same size before you begin melting them, and DO NOT add water to thin out the chocolate. Add a little milk or cream slowly.

I'm no expert on this...but I would think that the Cocoa content, a derivative of the cocoa nut, is really the 'chocolate' content you are looking for. I believe that the dark or semi-sweet variety would contain the highest levels. As far as melting goes, the milk chocolate should be the slowest to melt because of the stabilizers added to prevent it from naturally melting quickly. The cocoa content itself would not have a great deal to do with the melting point of a chocolate bar, that would be dependent upon the quantity of remaining ingredients such as butter,cream,milk etc.So...I think the semi-sweet would win out on this too.

Generally the darker the chocolate, the more antioxidants and other healthful stuff it contains.
The lighter stuff is cut with more cocoa butter, which adds creaminess, but increases the fat content. Lighter chocolates melt easier, also.
Milk chocolate is what we usually find in American candy bars and has a creamy texture and smoothness due to the added milk.
White chocolate is made without the cocoa solids, just the cocoa butter, and therefore has the most fat and the least healthful stuff in it.
Regular chocolate melts at almost exactly the same temperature the human body maintains.

Semi Sweet of the ones on your list. Actually Dark chocolate has the most cocoa in it, which is the main ingredient in Chocolate. Semi sweet is partially dark chocolate and milk chocolate has more milk in it, hence the creamier texture. I love white myself, but it's basically milk chocolate with vanilla flavoring. They all should melt the same, but if you want to thin it out, I use a little vegetable oil. This way it will still harden when dried.

Dark chocolate has the most chocolate in it. Everything else is thinned out with other flavors or milk. White chocolate is NOT chocolate at all !! Do not be lead to believe that white chocolate is even related to chocolate!
