Like a lot of fast food, instant ramen are typically made from processed ingredients that lose a lot of their nutrients in the processing, um, process. On top of that, they often have a lot of chemical ingredients- MSG, heaps of salt, and other crap. Probably the most nutritious part of cup noodles is the water that you add. Maybe they should make vitamin-fortified cup noodles, like is done with some breakfast cereal. ;-)
Traditional ramen noodles are usually more nutritious, as they are made with more wholesome ingredients- whole wheat, seaweed, etc.
To make your mother happier when you eat cup noodles, add some vegetables in- some chopped carrots, celery, seaweed, or whatever else you think might be good.

First of all. All foods are nutrients and not bad for you. Just some foods are better for you than others. A lot of quick fix meals like ramen noodles are not as nutritious. However, ramen noodles are quick and easy when you are on the go and better than nothing at all. They are high in carbs and salt. Moderation is the best key for foods like this. Okay to eat a cup of ramen noodles if you like them or convenient...but, not every day for lunch. :) Or, if you really like regular kind, try adding luncheon meat and cooked veggies to them to spice them up and make more nutritious. My daughter cooks ramen noodles. drains them. and then stir fries left over veggies. adds an egg and the spice packet and stir fries some more until the egg is cooked.
