You are going to laugh but the way they eat them in France is raw with butter and salt. They just take a dinner knife and put the butter on the radish and a little salt. The butter takes the acid bite from the radish and it is delicious

Also radish salad with Avacado

Use avocados that are ripe but not overly soft so they will hold up in the marinade.


8 red radishes, trimmed and thinly sliced
1 English cucumber, peeled, seeded, and coarsely chopped
1 red bell pepper, cored, seeded, and thinly sliced
2 avocados, peeled, seeded, and cut into 1/4-inch dice
6 tablespoons seasoned rice vinegar
Salt and black pepper, to taste
Pinch of sugar (optional)
2 tablespoons chopped fresh parsley
1. In a medium bowl, combine the radishes, cucumber, red pepper, and avocado. Toss gently.

2. In a small bowl, whisk together rice vinegar, salt, and black pepper. Sprinkle the dressing over the vegetables, toss to coat them, then cover with plastic wrap. Set aside for 30 minutes to 1 hour for the flavors to mellow.

3. Taste the salad and add a pinch of sugar, if you like. Stir in the parsley.

CARROT AND RADISH SALAD

1 medium size carrot, julienned
1/2 lb. radish, julienned
1 t. salt
1 T. sesame oil
1 T. rice vinegar
1/4 t. soy sauce
1/4 t. sugar
pinch cayenne

Put the carrot and radish in a bowl. Add the salt, mix well and let sit for 1 hour. Drain thoroughly, pressing out as much liquid as possible. Add the sesame oil, vinegar, soy sauce, sugar, and cayenne. Mix and eat.

I too love the radish. chop very small bits w/equal amts. of sm. elbow mac's. one quarter amt. Of scallions. so basically a veg and mac salad. the dressing is up to my re fridge.
