Several years ago I had tried a recipe from either First magazine or Woman's World magazine (I think). I believe it was sweet potato on the bottom and pecan mixture on top. I'm just wondering if any one has this or similar.

Get a large can of sweet potatoes and drain off the syrup.

Mash the sweet potatoes and in a mixer to them add: add 2 eggs, a cup of half milk half heavy cream, 1/2 cup dark brown sugar and spices: ginger, cinnamon, nutmeg, cloves (about 1/4 teaspoon of each but 1/2 tsp cinnamon. 1 teaspoon vanilla or a tablespoon of brandy, bourbon or rum

Pecans topping: chopped pecans, blended with your hands in a bowl with: 3 table spoons butter, pinch of salt, 1/4 cup white sugar, 1/4 cup flour and 1/2 teaspoon cinnamon - Make it crumbly

In a pie shell that has been pre-baked about 10 mins and cooled: place a thin layer of crushed pecans on the bottom then pour the sweet potatoes and top with the pecan crumbs

Bake at 326 for about 35 minutes until pecans are well browned and the pie is set. Allow to cool at room temp and service with

Bourbon or Rum or Brandy Whipped Cream
(depending on the liquor you put in your Pie) can use a teaspoon of vanilla


1 pint heavy cream whip until stiff
add
3 tablespoons powdered sugar
1 tablespoon brandy or bourbon

Mix and chill serve on the pie

You can cook your own sweet potatoes by wrapping them in foil and baking at 350 for about an hour or so - the peel comes off easily

INGREDIENTS
1 pound yams or sweet potatoes, cooked and peeled
1/4 cup butter or margarine
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon ground cinnamon
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 (6 ounce) graham cracker pie crust
Pecan Topping:
1 egg
2 tablespoons dark corn syrup
2 tablespoons packed brown sugar
1 tablespoon melted butter
1/2 teaspoon maple flavoring
1 cup chopped pecans
DIRECTIONS
Preheat oven to 425 degrees F. With mixer, beat hot yams and butter until smooth. Add EAGLE BRAND® and remaining ingredients except crust and Pecan Topping; mix well. Pour into crust.
Bake 20 minutes. Meanwhile, prepare Pecan Topping, (recipe below).
Remove pie from oven; reduce oven to 350 degrees F. Spoon Pecan Topping on pie
Bake 25 minutes longer or until set. Cool. Serve warm or at room temperature. Garnish with orange zest twist (optional). Refrigerate leftovers.
Pecan Topping: Beat together 1 egg, 2 Tbsp. each dark corn syrup and firmly packed brown sugar, 1 Tbsp. melted butter and 1/2 tsp. maple flavoring. Stir in 1 cup chopped pecans. (Use pecan topping mixture in recipe as noted above).
