The 2 cans of gravy were fine, you should never add water to canned gravy. As far as you having no salt, buy Mrs. Dash in the seasoning isle. It has no salt and has such a great flavor. I use original flavor but it also comes in other flavors. I don't use salt either, just Mrs. Dash. Buy it, you'll be glad you did. It's not expensive.

Check out that can of beef gravy mix. Unless you bought an organic or low/no sodium 1 can could have been as high as 500 -1000 mg of sodium. You didn't do yourself any favors from what i gather. Use lots of seasonings that are salt free. Thyme, rosemary, etc. are great in roasts. It's going to take a while for your tastes to get used to no salt. once you've conquered that you won't want to pick up the shaker. Good luck.

1 extra lean beef pot roast (2-1/2 lb.), trimmed of any visible fat
2 tsp. oil
1-1/2 cups water, divided
3/4 cup brewed MAXWELL HOUSE Coffee
Pepper
6 carrots
2 cups potato pieces
1 large tomato, chopped
1 onion, sliced
2 Tbsp. flour
4 cups cooked MINUTE Brown Rice
Preparation
BROWN meat on all sides in oil in nonstick Dutch oven. Pour 1 cup of the water and coffee over meat. Season with pepper. Bring to boil; cover. Reduce heat to low; simmer 1 hour.
ADD carrots, potatoes, tomatoes and onion to Dutch oven; cover. Simmer an additional 45 minutes or until meat is cooked through and vegetables are tender. Place meat and vegetables on platter, reserving liquid in pan. Keep meat warm.
MIX remaining 1/2 cup water and flour until well blended. Gradually add to hot liquid in pan; cook until mixture boils and thickens, stirring constantly. Simmer 3 minutes, stirring constantly.
SLICE meat across grain into thin slices. Serve with vegetables, gravy and rice.

I have never heard of or seen soggy meat so I am confused by what you mean. As far as beef I thinkk you should Never do a beef roast in the crosk pot as it will Always end up over cooked. A beef roast should be doen in the oven and should Never be cooked past medium and even then it is a a bit to done for rme. Add less liquid? Are covering the meat in liquid? The meat itself will relase so liquid and it's not going to evaporate outs since the lid seals tight. Only add about 1/2 to 3/4 cup liquid. *** TO ROAST is done in a dry heat. "A ROAST" is a type of cut of the meat. People are areguing for the wrong point. Although I still stand by the fact that beef shouldn;t be done in a slow cooker.

One, instead of beef gravy use beef broth and don't add water. Two, cut a few slits(kinda deep) in the top of the roast and take a couple fresh cloves of garlic and jam them in the holes and make sure they're down in there good. This will add a lot of flavor to it.

try using onion soup mix-the dry packaged mix. Garlic always gives it a good flavor and is good for you also. When it's all done cooking take the broth and add beef bouillon cubes and flour to thicken for your gravy.

You should always marinade beef with BOVRIL....you'll find it in the isle with the spices. Its beef flavoured marinade and it makes beef taste amazing without adding any salt what so ever!

do not add water to the prepared gravy,as you are diluting the taste, when i do mine i add gravy powder when its all cooked, this thickens the gravy too.

You can add spices without adding salt. Try onion and/or garlic powder....there are several spices that are salt free.
