Well with your appetizer I would serve a nice white wine, something light and airy. I would also have a little more out for the guest such as a cheese & cracker platter, some fruit, maybe a nice spinach dip, a small veggie platter. You can even heat up some of those baby quiches.
As far as dessert goes, I don't know the name of it right now (what can I say it's almost midnight), but I'm sure you've seen it in your local grocery store that has a bakery. It's that very light custardy dessert with the various fruit sliced on top. That would be light and refreshing. Or if you want to be adventurous you can make a home made creme brulee and serve it with a nice port or champagne.

with the appetizers serve a good white wine not too dry. for a main course fish would be perfect complimenting your choice of appetizers--stuffed trout for example. dessert should be light-- i had this a while ago and it was great: almond mousse (prepare vanilla mousse as directed on box but add almond extract; after its chilled and set, sprinkle almond slices on top) very rich but light. if you dont want to serve alcoholic beverage, try this: equal parts lemonade (made with fresh squeezed lemons) and iced tea . To it add fresh mint leaves (sweet mint, not peppermint) and a bit of fresh squeezed lime juice.let it steep in the fridge for a few hours before serving. Add a sprig of mint and a lime slice to each glass.

Asparagus goes great with beef, imo, even though it sounds like your appetizer would be best with a sweet white wine. Perhaps, if it isn't too fancy, just go with champagne for the meal?
I'm thinking prime rib, but add your own fav recipe in. Here is what I would go with though:

Shrimp Cocktail or chicken or beef brochette with peanut sauce.
Easy desserts: buy a prepared poundcake, melt semi sweet chocolate or white chocolate in a glass bowl over lightly boiling water. (double boiler) and dip strawberries, pineapple, poundcake. It's your own little chocolate fountain.
Beef/chicken brochette
1-1/4 lb (550 g) lean beef /chicken

1 piece lemon zest

2 medium size chopped onions
--------------------------------------------------------------------------------
1 finely chopped garlic clove
--------------------------------------------------------------------------------
1 tbsp Chinese light soy sauce
--------------------------------------------------------------------------------
2 tbsp groundnut oil
--------------------------------------------------------------------------------
1 tsp ground cumin
--------------------------------------------------------------------------------
1 tsp ground turmeric
--------------------------------------------------------------------------------
1 tsp salt
--------------------------------------------------------------------------------
3 tbsp finely ground roasted peanuts
Method
Dry the beef with kitchen paper and cut into cubes.
In a food processor, blend the lemon zest, onions, garlic, soy sauce, oil, cumin, turmeric and salt to a purée. Add the finely ground peanuts.
Coat the meat in the mixture. Leave to stand for 1-2 hours in a cool place. Turn at intervals.
Soak wooden sate sticks in cold water for 20 minutes.
Skewer the meat on the sticks and broil (grill) the sates evenly over a barbecue or under a hot broiler (grill), until brown all over. Turn the sates several times during cooking and serve.
AUTHENTIC THAI'S PEANUT SAUCE
4 teaspoons corn oil,
1/2 cup minced red onion,
2 tablespoons minced garlic,
1/2 teaspoon hot chili pepper
2 tablespoons sugar
2 tablespoons vinegar,
1/3 cup peanut butter,
1 cup of water
In a blender, combine corn oil, onion, garlic and hot chili pepper; blend for 1 minute
Empty the mixture into a saucepan and place over low heat until the mixture starts releasing aroma. Add peanut butter and mix well over low heat.
Add water and let it simmer for 10 minutes or until thickened.
Stir in vinegar and sugar; continue to simmer for another 1-2 minutes. Taste and add more vinegar and sugar if the mixture does not have the sour and sweet taste.
Place sauce in a shallow plate for satay dipping or pour over fresh salad.

well it sounds like a fancy party but i have an easy desert
get a block of cream cheese and choose some sort of berry pie filling or something of that sort and pour over the block of cream cheese. serve with grahm crackers. it is very good!
