Does anyone have any ideas or recipes I can use to celebrate my parents' anniversary? If providing a recipe, please know that we are vegetarians and very cautious when it comes to health and calories. If not food, please something simple but elegant. Thank you.

Depending on how many people are in your family (siblings and possibly your/their children), I would suggest maybe have a nice dinner party at your house if possible. This way, you will be able to cook the foods you, your parents and your family enjoy to eat. Pull out the nice white linen table cloth, a nice colored linen napkin and the good dinnerware. If possible, use the color scheme from your parents' wedding for the napkins, candles and other decorations (nice bouquet of flowers you can send home with them after dinner is over) while getting a picture of them from their wedding as well as a picture from now placed near the table for viewing pleasure.

A nice dessert that you all enjoy dedicated to your parents would top it all off.

spinach stuffed mushrooms, lettuce wrapped asparagus.

Then put a sign on that says "I don't eat anything with a face, but I declaw my cat"
