Thanks! I never really thought of it that way. I was just trying to think outside the box...ya know something besides turky, stuffing, sweet potato, and all of the usual. I'm not going to cook him up some beans and serve him wearing a sombrero, I was just thinking something simple, that wouldnt be too obvious. Thanks for the tips everyone!

Why not making a dessert or appetizer instead of a side dish? It is almost as simple and will go well with whatever you are cooking...

Appetizer

Cream cheese roll with pico de gallo and chicharrón:
1 small tomato finely chopped (remove seeds, you need this as dry as possible)
1/4 onion finely chopped
1 tsp finely chopped coriander
2 pkg cream cheese
1/2 cup crushed pork rinds

On waxed paper roll out the cream cheese to 1 inch thick
put the tomato, onion and coriander mix (you can add some jalapeño) and make a roll.
after that, put the roll on the crushed pork rinds to cover it completely.
Serve with tostitos.

Dessert

Capirotada
French bread
piloncillo or molasses
unsalted peanuts
queso añejo
raisins

Cut 1 french bread into 1 inch thick slices (a day or two old bread is better) Fry the bread in some corn oil (the oldest the bread, less oil it will absorb) and put them on paper napkins to remove extra oil.
If you can get piloncillo cones, boil two of them with two cups water and 2 cinnamon sticks. If not, get molasses and thin it with little water, and boil it with 2 cinnamon sticks.
Put one layer of bread, sprinkle with raisins, peanuts, cheese and molasses, then other layer of bread, raisins, peanuts, cheese and molasses.
You can make this one day ahead, as bread is supposed to be quite soft after been soaked in molasses.

This is a typical Christmas dessert that will work well for thanksgiving.

Hope this helps...

Black Beans

This hearty recipe can be used as a side dish or a meal in itself.

INGREDIENTS:

1lb uncooked black beans
6 cups hot water
2 cloves of garlic, peeled and finely diced
1 serrano chile, seeded and finely diced
1 sprig of epazote, finely chopped
1/2 of an onion, diced
1 teaspoon cumin
salt to taste

PREPARATION:

Rinse beans and discard any debris. Place beans in the bottom of the pot and cover with the hot water. Bring beans to a boil, then reduce to a slow simmer and cover. Simmer for about 2 hours. Add in additional ingredients and simmer for another hour, or until beans are soft and a broth has formed. Serve beans with a slotted spoon for a side dish. Or, serve in a bowl with the broth and add in some cooked, cubed chicken and some salsa for a main dish.

Grilled Onions and Peppers

These grilled onions and peppers are a perfect addition to your fajitas or next to a piece of grilled chicken. They are so easy to make yet the flavors are extremely bold.

INGREDIENTS:

5-10 green onions, large
5- 10 peppers, small, assorted
1/3 cup vegetable oil
1 tablespoon salt
1 tablespoon pepper

PREPARATION:

Prepare the onions by trimming off the roots at the end. Rinse the onions and peppers thoroughly and pat them dry with paper towels.
Place onions and peppers on a plate or in a shallow baking dish and drizzle them with vegetable oil.
Use your hands to rub the oil all over the onions and peppers.
Sprinkle liberally with salt and pepper.

Grill on your barbecue for about 10 minutes or until the skin of the peppers is browned and they are soft. The onions will be slightly browned and wilted.

Good Luck :)

Girl! I agree with every single one who wrote! yes he's gonna feel weirder because thanksgiving food isnt mexican! But if your gonna make a mexican dish, then rice OR beans would be great! Both are very good AND traditional. Go with the brown rice, cant and wont go wrong.

Maybe something original like refried beans slow cooked in a cooker......too easy....just put salt and maybe a little garlic salt for a little flavor! I cook mexican food all the time, put the pinto beans in a slow cooker the night before your feast and they should be ready the next day!

um, maybe you can serve guacamole and chips, or salsa and chips maybe as an appetizer or something before you have the actual dinner.

or maybe some pork rinds served with salsa as dip. you can always serve refried beans as well, those are SO good.
you can buy them at your local mexican meat market usually called a (carniceria).

i think it's great that your trying to make him something for thanksgiving.

It wouldn't be too hard to prepare a rice dish and make that work with the rest of your turkey day dinner. Maybe flan for dessert? You could do chips, salsa, and guacamole as appetizers. Also consider that he might be eager to eat a traditional Thanksgiving Day meal. Perhaps the best way to help him feel welcome is just be yourselves.

Why do you want to cook him Mexican food? Give him something different. Have him teach you to make a popular dish that he likes. Teach him to cook something you like.
