Most people think of French cuisine as croissants and frou-frou sauces, but they have some of the best cuisines in the world. Ideally, French cuisine is rich but light.... They have a lot of stew-like dishes (like Coq au Vin mentioned by a previous poster) in which the juices can be sopped up with french bread in the winter time for a hearty meal. Generally, the French like taste and depth in their food, but are not necessarily going for quanitity to achieve that depth....it's more taste and texture based. it's true the French eat a lot of omelettes and steak w/ pomme frites (french fries), but because they cook their food differently than we do, it seems to come out a lot lighter than we think.

French cooking is really more about good, fresh quality ingredients than about recipes. A good starting point might be to master how to make an omelet, and to learn what would taste good in that omelet.
With French cuisine, simplest is often best.

1) crepes are very popular..it's veeeery easy to make all you need is the batter (which is easy to make, can find it on any cooking website) and then put in on those portable grills and just thin it out so the batter forms a nice circle! put anything you want in it, powdered sugar, nutella, bananas, lemon/brown sugar..anything!
2)chocolate mousse, creme brulee, eclairs
3)for more savory choices, fois gras is very popular (but, if you are against cruelty to animals i would not recommend this at all..they basically force feed geese)
4)mussels (les moules in french) are very popular
5) coq au vin (a chicken dish)
6) Truffles are a delicacy (a type of mushroom, not the chocolate.......but alas the chocolate in france is great!)
And of course, le fromage (cheese) is very popular, and is served after the main meal with fruit.
there are many courses in french cuisine including: hors d'oeuvres, the entree, the main meal (plat principal, and no the entree and plat principal are not the same), salad, and lastly the cheese/fruit plate

The french cuisine is very regional eg Alsace-Lorraine very hearty like Quiches,Sauerkraut,Sausages,the Toulouse aera is famous for it's Cassoulet (white beans in a creamy sauce with diff. meats,chicken/duck pieces, the Cote d'Azur very mediterranean with lot's of seafood, the famous bouillabaisse (fishsoup), lot's of olive based dishes etc. it's simply imossible to name them all but wish you a Bon Appetit!

I know crepes are very popular. Basically it is some kind of pancake mix and you put choclate and creme and stuff on it and roll it up, some prefer to put ham and cheese and things like that in the middle.

there are many recipies that i love from france but for winter time, specially after skiing, my favourite is "tartiflette", and it is also very easy to make. you can find the recipie anywhere on the internet. the most difficult part, but not impossible, is to find the cheese that is the key for the dish: "reblochon cheese".
