Breakfast burritos are the way to go. My husband and I tailgate all the time and that is our favorite to make. The ingredient we use are, Tortillas of course, eggs sausage, bacon or churizo, and potatoes. Pile it all in the tortilla and smother with salsa. Good stuff.

I would fix biscuits sliced with ham. Serve Jam on the side.
A breakfast casserole would be good, as would breakfast taquitos and salsa.
Sweet rolls and fruit salad would be refreshing.

Make sure there is a lot of meat. Sausage, bacon, the obvious breakfast meats and corned beef hash. Keep it simple. Don't give them so many options that they want to taste everything and not have room for a good beer buzz by the time the game starts.
