The word Hibachi , Hi = fire, Bachi = a contracted form of "To Cook" basically , the types of sauces you use are up to your imagination. The Japanese , basically use Soy sauce seseme oils(Very little ,just a coupla drops) ginger ground up , what is called Raiyu a red chili oil. in a small cup , mix 3 ounces of Kikkoman , mix in a few drops of raiyu ,and seseme oils , ginger or garlic ground up, mix well , baste on the meats as you grill.

Ginger Sauce
5 ounces sliced onion, rinsed in running water for 15 minutes
2 ounces ginger, peeled and sliced thinly
1 lemon, peeled and chopped, juice squeezed
2 cups soy sauce
1 cup vinegar
Combine all ingredients into a blender and mix well. Stir mixture completely before serving. Ginger sauce may be stored in a plastic or stainless steel container in refrigerator for up to one week.
Teriyaki Sauce
1 cup soy sauce
1/2 cup sake (rice wine)
5 teaspoons ketchup
1 cup sugar
1/3 cup cornstarch dissolved in 1/3 cup of water
1 cup Mirin (sweet cooking sake)
Juice of one freshly squeezed apple or 3 tablespoons apple juice
1 pinch black pepper
Combine first seven ingredients in saucepan and cook for 10 minutes over medium heat. Gradually stir in dissolved cornstarch solution until mixed well. Stir completely before serving. Sauce may be stored in refrigerator for up to one week. Great for steaks or poultry.
Cream Sauce
2 cups soy sauce
1/3 cup ground roasted sesame seeds
1 cup whipping cream
1 pinch garlic powder
1 teaspoon dry mustard dissolved in 1 teaspoon water
Combine ingredients in blender or food processor and mix together for 15 seconds. Pour mixture and one cup whipping cream into saucepan, stirring over low heat. Sauce may be stored in refrigerator for up to 3 days. When re-heating, add 6 tablespoons whipping cream and stir completely before serving.
