Just received about 2 pounds of Boudain, and want to make something really tasty with it, but fresh out of ideas!

As a kid, we always ate it more like a sausage dog, but I was just wondering if there's actual meals that you could fix using it?

yum -- its not really meant to be used as a cooking ingredient i don't think. its more a meal stuffed in casing. enjoy it as a side with some poached eggs swimming in hot sauce or other cajun brunch kind of food. sliced up on some good crusty bread is always good
