Here's the recipe...how can I adapt it to make it richer and creamier tasting?
10 cups instant nonfat powdered milk
6 oz. powdered nondairy creamer
4 cups powdered sugar
2 cups unsweetened cocoa powder
1 bag mini marshmallows
2 – 3 tablespoons cinnamon

Thanks for so many good recipes. I need to keep this a DRY mix, which will be put in jars and packaged along with some pretty Christmas mugs.

I looked at that and thought "nice idea -- but 'powdered nondairy creamer' Bleah. I wonder if there's a way around that..."

And found this comment on a similar recipe:

"I now add a large box of instant chocolate pudding mix to the recipe. It makes it a little richer and creamier."

I was going to suggest you just grate some plain chocolate into it...

I vote for adding real chocolate.

The marshmallows are a very nice touch, though.

My mom used to make hot chocolate mix when I was a kid, and it always had the powdered Nestle Quik mix included. The pudding suggestion sounds really good, though, and I bet that would add the creaminess you are looking for. Here are a couple of other interesting recipes:

Special Hot Chocolate Mix

1 ¾ cups dry milk
1 cup French vanilla flavored coffee creamer
1 cup instant powdered cocoa mix
¾ cup powdered milk
1 dash salt
½ cup miniature marshmallows

1.Mix all the above ingredients until well blended.
2.Place in a canning jar with a tight fitting lid.
3.Measure a generous 1/4 cup mix in mug. Pour boiling water over mixture and stir until dissolved.

Gourmet Hot Chocolate Mix

1 box (14 quarts) nonfat dry milk
1 jar (1 pound) non dairy coffee creamer
1 box (2 pounds) dry hot chocolate mix
1 bag (2 pounds) confectioner's sugar
1 jar (15 ounces) chocolate malted milk mix

Combine all ingredients together. Store in an airtight container. Use 1/3 cup per 2/3 cup boiling water. Top with marshmallows or whipped cream.

This recipe is wonderful.

INGREDIENTS
6 1/2 cups powdered milk
1 (5 ounce) package non-instant chocolate pudding mix
1 cup powdered chocolate drink mix
1/2 cup powdered non-dairy creamer
1/2 cup confectioners' sugar
1/2 cup unsweetened cocoa powder
DIRECTIONS
In a large bowl, combine powdered milk, chocolate pudding mix, chocolate drink mix powder, creamer, confectioners' sugar, and cocoa. Divide the mixture between two 1 quart jars. Seal, and decorate as desired. These can be stored in a dry area for up to 3 months.
Attach a tag with the following instructions: Hot Cocoa: Dissolve 1/3 cup cocoa mix in 1 cup boiling water.

Hot Cocoa Mix
Ingredients:
4 cups dry milk
1 cup unsweetened cocoa
2 cups sugar
1/2 teaspoon salt
1 teaspoon instant decaffeinated coffee (optional)


Directions:

Mix the ingredients and put them into a plastic container or zipper-top plastic bags.

Use 1/4 cup per cup of boiling water.

Candy Cane Hot Cocoa Mix
Ingredients:
1 cup confectioner's sugar
1 cup Cremora
3/4 cup cocoa
3 candy canes -- crushed



Directions:

Stir together first 3 ingredients until well blended. Stir in crushed candy canes. Store in an airtight container.

To use: Add mix (1-2 tablespoons - or to taste) to 3/4 cup of boiling water. Add a candy cane as a stirrer

Creamy Hot Cocoa Mix
Ingredients:
2 cups Instant nonfat dried milk
3/4 cup Sugar
1/2 cup Unsweetened cocoa
1 teaspoon Salt
1 cup Miniature marshallows


Directions:

Stir all ingredients together and store in a tightly covered jar.

TO USE: Put 2 to 3 heaping tablespoons of the mix into a mug and fill with boiling water or, for an extra rich drink, hot milk. Top with whipped cream if desired.

This recipe for Creamy Hot Cocoa Mix serves/makes 4.25 cups

Try and change the amounts of pwd milk and creamer. Maybe 8 cups pwd. milk, and 3 cups creamer. or even more creamer... remember to use a good quality non-dairy creamer.. I actually think Borden's Cremora is creamier than Coffe-mate. Good luck.. I really like the cinnamon addition to your recipe. oh yeah... Merry Christmas!

Hmm, this is an easy one. First, please eliminate the instant milk and non-dairy creamer. Replace those with regular milk and heavy cream, respectively.

Also, try this wonderful recipe from Barefoot Contessa (foodnetwork.com). You may substitue milk or dark chocolate.

4 cups whole milk
4 cups half-and-half
1 pound white chocolate, chopped
2 teaspoons pure vanilla extract
Seeds scraped from 2 vanilla beans
1/4 to 1/3 cup orange flavored liqueur (recommended: Grand Marnier)

In a saucepan on medium heat, heat the milk and half-and-half to just below the simmering point. Remove the pan from the heat and add the white chocolate. When the chocolate is melted, add the vanilla, vanilla bean seeds, and 1/4 to 1/3 cup orange liqueur, according to taste, and whisk vigorously. Reheat very gently and serve.

forget instant nonfat powdered milk - makes it.....not good
forget powdered sugar

Use real cocoa powder 1 Tablespoon for each cup......and you have to take some water...boil it and then add the cocoa to cook it....so it doesn't have that raw...flavor.....
Then add the splenda to the cooked (boiled for at least 3 minutes cocoa & water)....good dark rich chocolate color
Use splenda 0 calories---to taste..
Use 1% milk about 3/4 cup for each cup you want.
.....add....low-fat half & half for a rich taste
- add a touch of salt to the whole mixture...very little.
Taste..... only when you like the taste and ready to serve
Get a can of whipped cream and add to top it off.

Have the mini-marshallows for each person to add...and have cinnamon sticks available...
Adding cinnamon changes it from hot cocoa to hot cinnamon flavor...and that's not preferred by most when they want good dark hot chocolate!

I'd add some more coffee creamer


If you want to give it a southwestern kick, add about 1 tablespoon cayenne pepper

salt makes chocolate sweeter try 1 tsp or something test it in some before you use the whole thing
