Chicken breasts w/herbs cooked in lite olive oil. Spinach Alfredo Pasta w/ Sauteed Portibello Mushrooms -
Zucchini & Squash /w lite onions. ( I didn't like the Zucchini/ Squash idea...but hey..my company wants it)

Any ideas what to do w/the zucchini / squash to make it tie in w/the rest of the meal better?

Go with Courtney on the wine - Sauv Blanc is the key! Reisling is a desert wine and the sweetness will overdo it. The Sauv Blanc will break up the richness of the alfredo sauce and pair well with the herbs.

As for the Zucchini/Squash, I say steam with just a dash of seasoning - again, you don't want to overpower your main entree, and that alfredo sauce requires a light veggie. Make it al dente - overdone squash and zucchini is no good!

I like Pinot Grigio w/ a dish like that. Bake the squash w/ brown sugar, cinnamon, nutmeg and some butter, salt and pepper. When done mash up adding a bit more salt and pepper, top w/ a bit of parm. cheese and rebake for a bit. Add the zucchini to the alfredo dish, that would be great.

A white wine would be really good with the meal-the red wine would overpower the taste of the chicken. The white is more of a compliment

Put some stewed tomatos,and a couple small cut up yams in it.
Instead of wine,try Mead,it`s a spiced white wine with femented honey,it`s lite and tasty.

White wine isn't good for you. YOu can drink red wine with any meal. I would choose a red wine like a cab.

Champagne - nice and light...and I haven't met anyone yet who didn't like champagne - and it's reasonable $6 to.. $250 a bottle.
