Besides Horizon brand, what other national brands are animal rennet free? I usually buy Horizon but the market I am going to today does not carry the slices (I'm dying for grilled cheese).

Try soy or rice cheese slices, then you don't have to worry about rennet. The rice American slices melt like a dream in grilled cheese!

Tillamook Brand cheese contains no animal rennet. It even states on the label if you look at the package "Contains no animal rennett" you can find that cheese in any supermarket. Food 4 less, Albertsons, Ralphs etc. But be sure to check ahead of time since all stores have different inventory. The cheese is so gooddddddddd

Go to the largest health food store in your area and you'll find other, local brands of rennet-less cheese.

If you have to purchase a block of cheese then place it on a cutting board, take a long bread slicing kind of knife and cut thin slices of the cheese yourself.

My favorite grilled cheese sandwich goes like this:

First, grill up some chopped onions

2 slices of whole wheat bread or focaccia bread

Several thin slices of mild cheddar cheese.

Place cheese in bread, add the grilled onions, one or two very thin slices of ripe tomato.

Grill in olive oil at a slow flame. Cover. When bread is golden brown, turn the sandwich over until the other side is golden brown. Cover the pan.

THE SECRET TO A GREAT GRILLED CHEESE SANDWICH IS TO BE PATIENT WHILE IT COOKS. Many people press heavy pans on top of the sandwich to make it thinner and to cook it faster. Just let it cook on a slow flame and wait for it to be done perfectly.
