Côtes de Porc aux Pommes à la moutarde
Pork Chops with apples and mustard cream
Pronounced: koht / de / por / oh / pom / ah / lah / moo tahrd

INGREDIENTS:
2 lbs apples, peeled, core, quartered and thinly sliced
1 Tablespoons butter
4 pork loin chops
salt to taste
1/4-cup dry white wine
1 cup heavy cream
1/4 to 1/3-cup Dijon mustard (depending on your taste for mustard!)
PREPARATION:
1. Spread apples in lightly buttered baking dish (large enough to hold pork chops without crowding). Bake apples in 400° degree oven for 15 minutes. Remove from oven.

2. While apples bake, cook salted chops in butter until browned, 7-8 minutes per side. Place chops on top of apples.

3. Deglaze frying pan with white wine, reducing it by half. Dribble it over the apples and chops.

4. Mix cream and mustard. Add salt and pepper to taste. Pour mixture over the chops and apples, shaking the dish to be certain the cream penetrates to the bed of apples.

5. Bake 15 minutes more.

Pommes de Terre purée à l'ail et l'oignon
Garlic and Onion Mashed Potatoes
Pronounced: pom / duh / tehr/ puh ray / ah / lahy / ay / loh nyo(n)

INGREDIENTS:
3 lbs. potatoes
1 medium onion, chopped
4 garlic cloves, cut in half, germ removed
5 Tablespoons unsalted butter, cut into small pieces
3/4 - 1 cup cream
coarse sea salt and freshly ground pepper

PREPARATION:
1. Peel and cut the potatoes into 1-inch chunks.
2. Put the potatoes, onion and garlic in a large saucepan and cover with cold water. Add a tablespoon of coarse sea salt.
3. Place over med-high heat and bring to a boil.
Cook for 20 minutes.
4. Drain the potatoes, onions and garlic and return to the dry saucepan. Mash with a fork or potato masher.
5. Little by little, incorporate the butter and cream, mixing with a large spoon. Taste and adjust seasoning if necessary.

Ratatouille

A roasted version of this classic vegetable dish from Provence. The oven roasting gives the vegetables a richer, intense taste.

INGREDIENTS:
2 red onions, peeled, trim root end but leave intact, cut into wedges leaving the root end on
7 red, yellow, and orange peppers, seeded and cut into quarters
2 eggplants, pick medium sized eggplants and cut them lenghtwise into quarters or eights
4 plum tomatoes, cut into quarters
4 baby zucchini, cut in half lengthwise
2 cloves garlic, crushed
4 sprigs thyme
1-1/2 cups tomato juice or V-8 juice
olive oil

PREPARATION:
Preheat oven to 350F.
1. Put the onions, peppers, eggplant and tomatoes in a roasting pan. Pour over 3 tablespoons of olive oil and toss to coat the vegetables.
2. Place in the oven and roast for 30 minutes.

And for Dessert:

Tarte aux Poires et Frangipane ~ Pear Tarte with Almond Cream
Pronounced: tahrt / oh / pwahr / ay / frah(n) zhee pahn

INGREDIENTS:
1 baked 10-inch tart shell
For the frangipane:
5 Tablespoons of unsalted butter, room temperature
1/3 cup of sugar
2 eggs
1/2 cup blanched almonds, ground
1/4 teaspoon almond extract
2 Tablespoons Kirsch (or dark rum)
For the rest of the tart:
3-4 pears, cut in half & peeled
2 Tablespoons lemon juice
2 Tablespoons sugar
3 Tablespoons apricot jam

PREPARATION:
For the frangipane:
1. Cream together the butter and sugar.
2. Add the eggs and cream some more.
3. Add the ground almonds, almond extract and Kirsch or rum and mix well.
4. Can be used immediately for a tart filling or it may be stored in an airtight container in the refrigerator, up to 4 days.

Preheat the oven to 350°. For the tart:
1. Fill the baked tart shell with the frangipane.
2. Cut the pear halves, lengthwise into thin slices, keeping them together at the stem end.
3. Fan the pears slightly and place over the almond filling in a wheel pattern.
4. Sprinkle the 2 Tablespoons of sugar over the pears. Bake the tart for 50 minutes.
5. Melt the apricot jam in a microwave. Brush the melted jam over the warm pears. Serve at room temperature.
