The answer to this one could be philosophical, especially since you point out the opposite question also, but it isn't. The answer could be because most vegetarians did eat meat, and want a familiar taste without having the guilt of killing a living being just for their taste buds, and this could be partly true.
It is the word meat. I met a vegetarian that said his field roast is a wheat meat. He wanted to get back to the real meaning of meat, which means food in general (wikipedia.com). He said the world needs to be open minded and embrace his field roast as a meat. Mind you all of us vegetarians were so upset with him on this, because in our society "meat" has the connotation of animal flesh, and to be shunned by all vegetarians/vegans. But he is right. Meat is food in general, and if we get back to that distinction then maybe his field-roast would be part of the norm, and not something that vegetarians/vegans would only eat. (Advertising at its best in this case in point).
I also think it is convenience of it. Fake meat is fast and it will contain the protein enhancing vegetables, like tofu, legumes, and grains. We know we can buy and eat this with all of our side dishes of vegetables and get our nutritional requirements. The name of the fake meat, like veggie burgers and not dogs, is for the consumer to relate to what it is (not too many vegetarians/vegans are born vegetarian/vegan) from past experiences.
As a vegetarian I may miss the taste of meat, but the price I have to pay for all the deaths on my soul is too much. Knowing that some cow was trying to escape the death prod as it was pushed along the corridor to the slaughterhouse, seeing all the other cows before drop down dead, knowing that it was next and was trying to flee for its life, does not go well with the cheese on the burger. I'll take the fake meat anytime with a clear consciense.

Most vegetarians don't eat meat because they don't want to eat animals. We don't not eat meat because we don't like the flavor. There's nothing wrong with the flavor. We don't want to contribute the suffering and slaughter of animals. Fake meats are a good alternative, giving us lots of meal options and providing us with protein. Fake burgers, for example, are another alternative, just like you can get fat free muffin mix instead of regular muffin mix.
If you're really concerned about how much vegetarians miss real meat, maybe you should consider getting a life. Or you could at least write out your questions/comments well enough for us to understand more than your first question. I mean, seriously, "should meat eaters don't make fake vegies out of cold cuts?" I honestly don't know what that even means.

It's not a question of not liking it for many vegetarians. For many of us, meat was something we grew up with. When we decided for ethical reasons to stop eating the flesh of animals, liking the taste did not just disappear. Faux meats are a great alternative for us. Besides that, when was the last time you saw a hot dog or bacon walking around on a farm? Just because similar alternatives are made for us, does not mean you own the principal of the "hot dog" nor is it written is has to be meat.

I don't miss it at all. In fact, I'm incredibly repulsed by it since I quit eating flesh.
Why do Veggies eat it? Because it's a convenience, helps us "fit in" I suppose, and it's also a good transition to the different but much more varied vegetarian and Vegan dishes.
You could make veggies out of cold cuts, but you would die from malnutrition. Plus I don't believe any meat eaters are morally apposed to vegetables.

Not all vegetarians eat fake meat. I don't. A lot of them don't want to be reminded of dead animals. Some vegetarians do miss meat, espeically if they've only recently become vegetarian and then they might like to eat fake meat products. It's not the case for every single vegetarian though so there's no point lumping all vegetarians into one catagory.

Vegetarians eat "fake meat" because it doesn't come from animals. To be honest with you, "fake meat" is actually good. No, I'm not a vegetarian, but I even know why people won't eat it. There are a few animals I will NOT eat.

If you did make fake veggies out of meat those would probably be the only veggies that I would eat and actually like. I'm just picturing steak cut into the shapes of carrots or chicken chopped into nice little balls to look like peas.
My hubby was a vegetarian for a few years before he meet me and he tried the fake products because he missed being able to eat things like burgers, chicken nuggets, cheese, etc.

1. It is easier for regular meat eaters to change to vegetarian if they have something to "Replace" their meat with. Say when you make a meal you make a meat, a veggie and maybe a potato or a pasta. If that is your "normal" meal most kinda of go a little crazy without something to put in that spot on their plates.

i can't miss it since i've been a vegetarian since birth. vegetarian people are just trying to have a traditional Thanksgiving when they have tofurkeys, and veggie burgers are really tasty. and i've never heard "not" dogs, or fakin' bacon.
