I would like to have an open house on Chrismas Eve.Every year we have the same old sit down family dinner and I do all the work..this year I would like to sever a host of seafood snacks

What a wonderful idea!
This is quite popular where I live on the west coast where fish and seafood are always served at social gatherings. The first suggestion I have is that many seafood appies have cream and mayo as an ingredient and it goes bad very quickly. In order to avoid this, we set out small dishes of crab and shrimp dips set inside larger dishes filled with crushed ice to keep them on the buffet table as cold as possible.
Smoked salmon and pickled herring tidbits are wonderful additions and keep well.
I make a curried shrimp pastry from the frozen puff pastry rolled out into a 12 X18 inch rectangle and make a mixture of 1 can of Campbell's cream of chicken soup, 2 Tbsp of curry powder and 1 cup of red and green chopped peppers and add a pound of fresh tiny shrimp. Spread this evenly down the length of the pastry rectangle and fold the whole thing up 'strudel' style and cut diagonal steam vents. Put on a baking sheet and into the preheated 375 degree oven for 20 minutes.
A nice cole slaw made with an oil and vinegar dressing rather than the mayo (again, the safety in mind) is a good compliment and a veggie and fruit tray. Of course, there's always sushi, for those addicted to it. Enjoy your party!

"People never guess this dip recipe is made with tuna. The liquid smoke gives it a unique flavor! Serve it with crackers."
INGREDIENTS:
3/4 cup Italian-style salad
dressing
1 cup sour cream
1/2 teaspoon seasoning salt 1 tablespoon minced onion
1 teaspoon liquid smoke
flavoring
1 (6 ounce) can tuna, drained
and flaked

DIRECTIONS:
1. In a medium bowl, mix the Italian-style salad dressing, sour cream, seasoning salt, onion, liquid smoke and tuna. Chill in the refrigerator approximately 1 hour before serving.

I used to make this a lot - in a fish mold that I inherited from my Mom. After unmolding I'd decorate the mousse with slivered almonds to look like fish scales. A pimento cut into three small pieces made the mouth and eyes of the fish. Served with party ryes it was always a hit and not terribly expensive to make.

Tuna Mousse

INGREDIENTS
2 envelopes unflavored gelatin
1/2 cup water
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) package cream cheese, softened
1 1/2 tablespoons Worcestershire sauce
1 cup mayonnaise
salt and pepper to taste
1 teaspoon onion salt
1 teaspoon celery salt (optional)
1 (12.5 ounce) can water-packed tuna, drained
DIRECTIONS
Line a mold, or pie pan with plastic wrap.
In a small bowl, dissolve gelatin in water and set aside.
In a large saucepan, heat soup and cream cheese until soft and smooth. Remove pan from heat.
Mix gelatin mixture, Worcestershire sauce, mayonnaise, salt and pepper (to taste), onion salt, celery salt, and tuna fish into the soup and cheese saucepan. Stir mixture until smooth.
Cover mold or pan and chill overnight. When ready to serve remove the tuna mousse from the mold and serve.

The Feast of the Seven Fishes is an Italian Christmas Eve tradition built around fish of all kinds and prepared in as many different ways as possible. Our friends Donna Quadri and Pasquale Felitti introduced it to us about ten years ago in their kitchen in Tribeca.

In Italy there is a holiday tradition - Feast of the Seven Fishes. You could do that.

My family is Italian on one side, and they tradionally have an all seafool dinner during the hoidays. We usually have fried fish, crabmeat stuffed portabellos, fried and boiled shrimp, crab claws, raw oysters, stuffed crab, and boiled crawfish. oh yum.
