Breakfast - Eggs with green pepper and onions, one piece of whole wheat toast and coffee or tea and water.
Mid Am-V8 juice
Lunch-sliced turkey with mayo on whole wheat crackers,soup of your choice,as much salad as you want and an orange.
Mid Afternoon-cookies and coffee.
Dinner-Fish or chicken or any meat really, salad, soup,baked sweet potato .glass of wine.
After dinner-6 oz milk or yogurt.Handful of almonds or other nuts.

I am one, so...
You need to limit yout carbohydrate intake. It doesn't mean that you need to eliminate them, it just means that you need to eat the good carbs, like fruits and veggies, limit your rice, or white pasta. Eat smaller meals, but eat every three hours.
What happens when you eat a lot of carbs at once when you are insuline resistant, your pancreas will release twice more insuline as the first time it released it, the cells do not recognize it, so they will release it once more to compensate, resulting in too much insuline in your blood, which in result can provoke hypoglycimia.
Anyhow, cheese is a good thing to snack on, even whole wheat bread or bread with no added sugar. Peanut butter is good (insuline resistant people absorb protein very well),
For a woman, thi can cause a hormonal imbalance, wight gain and fertility problems.
Eat a lot of Fiber.
Just on a final note, this applies to diabetics of type one and two sice thy can experience hypoglyciemia as well.

Google the GI Diet. That is an exellent regime to follow if you are insulin resistant! Its easy to follow and tasty too :D
