In theory, yes it can be caused by a car crash. Guillain-Barre syndrome can occur sporadically in response to many things, including trauma.
Have a look at the General Practice Notebook for more info on it (when searching, use the spelling that I've typed above to find it)

Doctors aren't sure what causes GBS, but they have some clues. For instance, doctors say most GBS cases seem to happen after a viral or bacterial infection, like a sore throat or diarrhea. This could be because the person's immune system is already working hard to get rid of the virus or infection and makes a mistake by attacking nerve cells. But doctors don't know why some people get GBS and other people recover normally

As far as I know they do not know exactly what causes Guillain-Barre syndrome.
YES apparently any stress could be a trigger to make the disease flare up. Catching a virus and being sick from that could also be a cause.
I would look it up on "google" as they are always making advances in med.

Guillain Barre Syndrome is a condition characterised by polyneuropathy and often leads, eventually, to respiratory distress or failure. An autoimmune disorder, it is usually triggered, by infection or occasionally vaccination. Trauma from road traffic accidents can certainly give rise to neurologic pathology (from spinal injury, usually) - though not GBS.
