Jewish people "can" do many things which Scripture forbids, but that doesn't make it right. Shellfish, prawns for example, are forbidden by Leviticus 11:10. Mammals that don't both have a split hoof and chew their cud are forbidden. Carrion birds such as vultures, buzzards and hawks are forbidden.

Fruits, vegetables and grains are permitted as long as they are not contaminated with unkosher animals.

And, no, kosher does not have anything to do with being blessed by a rabbi. But it does have to do with how the animal is killed. The animal must not be killed in a cruel manner. The animal must be calm and killed with one single motion of the knife that cuts through both neck veins. The inner organs of the animal must not have any tumors or adhesions for its meat to be considered glatt kosher. The blood must be completely drained from the animal through a process of soaking, salting and washing.

Yes, chocolate is permited, if made in a kosher way. Basically a matter of the processing plant being inspected to make sure that the equipment isn't being used to process unkosher products.

So, as to your question of prawn flavored crackers, it depends upon the source of the prawn flavor. It would be possible to create such a flavor from kosher sources and produce a kosher product, though obviously, proper supervision of the product would be required to verify that all the ingrediants are kosher.

For example, crabs are not kosher, but there are kosher "krab" products made from kosher whitefish. There are kosher "bacon" products not made from pig. So the "flavor" of an unkosher product is not the issue, the question is whether an actual unkosher product is contaminating the food.

Kosher is not a flavor. Kosher means that it has been prepared in a Kosher or "good" way and then blessed by a Rabbi. Most packaged foods now are Kosher. Just look on the label for a small circle with either a K or a U in it.
