As many as you can, if there are no restrictions. Are you serving shrimps for a party and budgeting how many kilograms to buy?
If you are serving big shrimps and have more than just one entree dish, 7 medium to large per person might be enough.

depends on the size of individual shrimps if salad then a more in numbers but then they are in salad and fork food.
if entree and hopefully jumbo shrimp around 15 to 20 per lb then six is fine. six ounces is what you need....colestrol has nothing to do with the quantity you can eat, shrimps are virtually fat free, unless breaded, or making a shrimp scami loaded with butter it will the butter adding to the calories.
