i've been a vegetarian for almost 20 yrs....and at thanksgiving i've pretty much always gone to some-one else's house and just made do with eating whatever dishes were meatless (and truly i've kind of always dreaded thanksgiving because of it....there is usually almost nothing i can eat, and everyone else is STUFFED)....
anyways this year i'm kind of thinking about cooking at home for my husband and I (he is NOT a vegetarian)....and i'm wondering what i could make...

turkey rolls

Make stuffing how you normally do, (I use bread torn into pieces, butter, onion, celery, and parsley) then wrap it in a slice of vegetarian turkey, so that it looks like a taco. Line them all up in a baking dish and cover with a vegetarian turkey or chicken gravy. I just make this with butter, milk, flour and a vegetarian chicken seasoning. Bake for about 30 mins at 350.... just till warmed.

I've been wondering the same thing. ;) I've only been veg for a little over a year... and I SAID I'd always make an exception for "the holidays"... but now it grosses me out to eat it... so yeah. :)

I don't know about a good turkey substitute (I tried a veggie "holiday roast" and it wasn't great)... but I do have a good ham substitute!! Works great for Easter or Christmas... I guess some people might have ham for Thanksgiving, right?? LOL

Anyway... get the Ives brand of Veggie Ham. It's a lunchmeat... but just don't peel it apart. Put some brown sugar glaze on it, throw some pineapple in if you like, and bake it in the oven until heated through. It was really quite tasty (and already sliced thin, like those expensive "spiral cut" hams). :)

I'll be checking back to see if anyone has turkey subs! Thanks for asking the question on a lot of our minds! :)

Come to think of it... Ives has Veggie Turkey slices too... I might have to try that this year!

Tofurkey!
No seriously, there are some great ideas out there. How about a baked stuffed pumpkin? Use something with a "meatlike" texture suck as TVP crumbles or Portobella mushrooms so your husband doesn't feel like he is missing something. Vegetarian Times always has good ideas too, try them.

I usually bring a vegetarian dinner for myself (and extra to share). One year I brought a mushroom nut loaf and a side of mushroom gravy so I was sure to be just as stuffed as everyone else. I've even brought a Tofurky with me and had the meat eaters asking for seconds.

Green Bean Casserole is one of my fav thankgiving dishes. I use fresh green beans. Mashed potatoes, Stuffing cook in a foil container instead of a turkey, Cranberry sauce, a good rice dish, fruit salad. What more do you need? Your husband can cook a small turkey.

Well, this is what I am making for myself. My husband is not a vegetariam either. Grilled Tofu, Veggies of all kinds, dressing made with bread crumbs, spices and veg. broth, onions celery, mushrooms.
Oh, and dont forget dessert! Pumkin pie made with pumkin and silken tofu. Chocolate Mousse pie made with semi-sweet choc chips and silken tofu, maple syrup.
There are several good websites out there that have really good veggie recipes. And a lot of them ....well he would not even know he was not eating meat, eggs or dairy!
I have made these before and my family loved them.

I make tons of sides to make up for it like mashed potato's, rolls, dumplings, peas, rice, salad, and lots of desserts. I've been vegeterian for years and you just have to think of waht you like to eat and work it into the meal.
