You want to have a boiled bacon joint and dark green cabbage which you've boiled in the water that the bacon has been boiled in. Serve it with lovely floury boiled potatoes such as Kerrs Pinks and fresh parsley sauce. That's all, keep it simple.

Definitely parsley sauce with the meat is traditional.
Instead of simple mashed potatoes you could try adding scallion (spring onions) to make Champ.
And Guinness. Plenty of Guinness, and nobody'll care about the food anyway :-).

Floury spuds,mashed or whole or in the skins like my Granny served them[ they were red skinned can't recall what they were, very old Irish spud]
Parsley or cheese sauce, but I much prefer HP.
If you don't like Guinness, then a large glass of very cold milk.

Hi, the best sauce would be a cheese sauce or butter sauce, cheese sauce goes very well with bacon.

I would say parsley sauce. Wherever I go in Ireland that is what they have.
