I'm a huge fan of the falafel. You can buy a mix in any health food or regular grocery store and it only takes maybe 20 min to make a whole slew of patties or balls. Then you refrigerate and anytime you need a little zing in your sandwich or pita heat em up and pop em in. They're a little spicy and they have lots of beans in them, so take you a Beano first if you are prone to gas.
Dice a cucumber, add some non-flavored yogurt, a little lemon juice, some dill, and salt and pepper to taste, and it makes the perfect topping. Enjoy!

1 tablespoon pure wesson canola oil or sunflower oil
1/2 medium onion, peeled,washed and finely chopped
1/2 cup shiitake mushrooms, washed and chopped
1 cup oyster mushrooms, washed and chopped
(use ordinary button mushrooms if these are not available)
1 cup indian cottage cheese, diced (paneer/panir)
3/4 teaspoon mango powder, to taste
1/2 teaspoon red chili powder, to taste
1/2 vegetable stock powder (I grate the cube of Vegetable stock with onion and use that)
4 slices white bread
Heat oil add onion and stir-fry on medium flame until it is transparent.Add chopped mushrooms and stir-fry on high flame until the water from the mushrooms is absorbed.Add diced cottage cheese, mango and red chilli powder and the chicken/vegetable stock cube powder.Stir-fry on medium flame for 3 minutes. Transfer onto a plate and allow to cool. Divide the filling into 2 portions. Place each portion of filling between 2 slices of bread. Toast

Cut up some mushrooms, onions, zucchini and bell peppers, toss with balsamic dressing and toss in a grill basket and grill until done. They are great cold the next day in a wrap.
Smartlife smart bacon, lettuce and tomato with mayo on whole wheat toast.

I often cook extra when grilling or roasting veggies to save for sandwiches.
Hummus is good too.
Or nut butter and honey (or banana if you are vegan)
Leftover Greek salad is great in a pita
one of my favorites is extra sharp cheddar and Plowman's pickle (it is like a sweet and sour dark brown veggie chutney from England and you can usually find in in regular grocers)

Look at the stuff Subway puts on their sandwiches. Bell peppers, olives, peppercinis. I also consider alfalfa sprouts, their is a spicey kind that is really tasty.

Hummus on whole grain with a slice of swiss and a slice of tomato
Avacado, sprouts and cheddar on whole grain
Peanut butter and banana
Baquette spread with pesto .. top with fresh mozzarella slices and sundried tomatoes.
Grilled cheese with mushrooms and tomatoes
Peanut butter with walnuts and raisins
Cheddar with sweet mango chutney on pumpernickel
Grilled portabella with swiss and balsamic vinegar.

My favourite is avocado with tomatoes and sweetcorn with plenty of black pepper. My kids like homous and tomato. We also have peanut butter and jam a lot.
