Hi there, my mom is diabetic and she and I are both in medicine and we both love cooking so we have pondered this for years.
The best answer I can tell you is use natural concentrated fruit juice instead of sugar, I know....carbs, but they will be so diluted and the flavor will be delicate and not harming to your body.
If you can use as little of artificial sweeteners, the better. They are harmful in a cumulative effect.
Go to a Natural Food Store and get a great book on natural cooking for the diabetic, also the Natural Food person will have helpful tips for you when you are there.
like use melted butter instead of oil when baking, same amount, you will not BELIEVE how light, fluffy and great your food tastes.

You can use a sugar substitute such as splendra. Here are some recipes I found on google (just type in diabetic candy recipes).

You can use sugar. Just adjust the amount of carbs you eat and count the candy carbs.

My dad has diabetes and he uses splenda in his coffee and when hes baking and stuff. it tastes just as good as sugar only its a sugar substitute...
