Sauteed Onion & Tomato Sandwiches.
Ingredients
2 medium onions, sliced
1 teaspoon olive oil
8 slices hearty whole grain or rye bread (toasted, if desired)
Honey mustard
3 small red and/or yellow tomatoes, thinly sliced
4 lettuce leaves, shredded
Small fresh basil leaves
4 ounces spreadable Brie cheese or tub-style cream cheese
Directions
In a large skillet cook onions in hot oil over medium-high heat for 5 to 7 minutes or until onions are tender and just starting to brown, stirring frequently. Remove from heat; cool slightly.
To assemble, lightly spread one side of 4 bread slices with honey mustard. Top with the onion slices, tomato slices, shredded lettuce, and basil. Spread one side of the remaining 4 bread slices with Brie cheese. Place the bread slices, cheese sides down, on top of sandwiches.

I'm sorry to hear about your Mom. I went through this with my sister. I think very simple meals. Steamed veggies, mixed green salads and chicken or fish. Simple dressings. Salmon is great since you can broil it and it only takes 8 minutes without turning and you can brush it with some mustard or a little soy sauce. Martha Stewart has some excellent fish recipes. Go to her website. Also I would suggest just a nice roasted chicken. Ina Garten has wonderful chicken recipes and roasted and steamed veggie recipes. She's on the Food Network. Also some nice pasta recipes would be good and I'm sure Mom will appreciate anything you do. Watch the Food Network during the week. Ina is on every day and her recipes are fabulous and very easy. I wouldn't do too much with beef. Hope this helps. Much good luck to you and your sister and your Mom.

"Special K Loaf"
1 large carton cottage cheese
1 onion chopped
6 and 1/4 cups special K cereal
1/4 cup melted butter
5 eggs slightly beaten
3/4 cup chopped nuts
3 pck George Washingtons broth OR 1/2 tsp season salt
mix all ingredients and bake 1 hour at 350 degrees
can top with picante sauce or mushroom gravy

Saute celery, onions and garlic in olive oil
Add two veggie boullion cubes
Add one large can tomato puree
Add on can water
Add one tablespoon dried basil
Add one 12 oz conatiner soft silken tofu diced
Simmer 15 minutes
Puree with an immersion blender or in batches in a regular blender
Add salt and pepper to taste
