The challenge is twofold 1) Make the crust from entire wheat flour and make it with out sugar (as if you were making a savory tart) 2) substitute the sugar on the apples to an artificial sweetener, or use an alternative sugar that's curb on the glycemic index (like agave sweetener) So, seem up a recipe for a entire wheat pie crust (whole wheat pate brisee) and use your favorite apple pie recipe with the suggested sugar alternative.

You could try making the pie with the spenda/sugar mix.
I made an apple pie with that recently and you couldn't taste the difference! The total carb count I think was around 40 grams, but you could have a smaller piece or just don't eat bread or potatoes with your regular meal.

You may want to try Stevia. It is a natural sweetener & can be used by diabetics. (My Aunt is a diabetic & she loves Stevia.) It doesn't contain chemicals like artificial sweeteners. Since Pie is such a special food, why not make it like you always do- with sugar and simply count the carbs and have a piece of pie instead of other carbos in your meal?
It's that easy.

I don't know about sugarless, but this website has a lot of vegan and fat-free recipes and they try to use less sugar as well. maybe you can substitue applejuice with honey and water?
