going to a pot luck bday party and need cold, inexpensive and easy appetizers.

no hot food.

there will be about 40 adults.

want something different for a change b/c we have these parties once a month and the same food shows up.

we already have the following which is boring to me but i can't tell people not to bring it:

spinach dip
salsa & chips
hummus & veggies
cheese & crackers
fruit & dip
shrimp cocktail
7 layer dip & chips
diet soda cake (i'm making that)

Salsa Roll-Ups
mix cream cheese with your fav salsa, spread on a large flour tortilla, roll tightly, and slice. You can add chopped black olives, peppers, almost anything. Make sure to drain any ingredients.

Easy Cold Appetizers

This is super easy, tastes great, and looks really appealing! Its also a great make-ahead. ( in fact it works best if made a day ahead)
You'll need some sliced ham-thin but not paper thin, a jar of pickled asparagus or pickled green beans, and some soft spreadable cream cheese.
Spread some cream cheese on each slice of ham almost to the edge. Lay an asparagus spear or bean on top of the cream cheese ( if necessary trim and add some extra, you need the asparagus or bean to extend right to the edges) Roll the ham up nice and tight, like a jelly roll, wrap in foil or plastic wrap, and refrigerate overnight.
Just before the party slice into pinwheels about 3/4 inch thick and arrange on a nice platter, cut side up. When you're cutting the rolls up you will need to trim a little off the edges or they won't look quite as nice. ( I always eat the little scraps- they still taste good!)

The old Texas standard: Rotel Dip with chips, pretzels and tortilla pieces but here is a new twist

1 Can Rotel tomatoes traditional style
1 large box of Velveeta
1 or more pound loose Jimmy Dean Spicey sausage
1 finely chopped onion
1 Can refried beans
1 cup or so prepared Guacamole

Saute the sausage and onion in a frying pan until browned.

In a glass bowl cube the Velveeta and pour the Rotel tomatoes over - cover and melt slowing in the microwave - turning as the cheese melts and stirring. When the meat and onions are browned drain the fat and stir into the cheese mixture.

Swirl the beans and quacamole losely into the cheese, cover and serve at room temperature. This is very colorful and everyone love it - there will be no leftovers.

COLD CUT APPETIZERS

2 slices ham, cut lengthwise into 3 strips
2 bologna slices, cut in 3 strips
3 pepperoni strips, cut in half lengthwise
2 slice American cheese, cut into 4 strips

Start with ham. Make a tight roll. Roll the bologna strip around the ham, and so on. Save the pepperoni for last. Pierce with a toothpick to hold the roll together. Serve to the kids as an appetizer instead of lunch. Or, in lieu of a sandwich in the school lunch for those kids who don't like sandwiches because of the bread. Just drop them in a baggie. They can be made with any combination of cold cuts.

BLT Canape

Ingredient List:
3 English Seedless Cucumbers (regular cucumbers will not work)
Lettuce - thinly shredded or finely chopped
Cherry Tomotoes - thinly sliced
1/2 lb. Bacon - cooked and crumbled
Mayo
Ranch Dressing

- Mix about 1/4 of a cup each of the mayo and ranch dressing, stir in bacon and set aside.

- Slice the cucumbers into 1/2 inch slices and scoop out middle but not all the way through to leave a cup. Turn upside down on paper towels to let some of the moisture seep out.

- Slice the tomatoes, you will need one slice for each cucumber.

- Shred or finely chop the lettuce.

- Assemble: take the cucumber and add some lettuce, a little spoonful of the mayo/ranch/bacon mixture and then top with a tomato slice. Enjoy!!!

Marinated Tuna

say 4 large cans of tuna in water open and drain then
grab tuna and squeeze the extra liquid out
*****don't squeese hand full of tuna on top of the tuna*****

6 oz of kalamata olives chopped
1 medium RED ONION diced *** not a white or Spanish RED****
4 oz of banana peppers chopped
1 oz diced garlic
3 oz chopped roasted red peppers
4 large basil leaves **** Roll all together real tight then slice
4 oz EXTRA VIRGIN OLIVE OIL
where do you get EVOO from.... ugly olives
place in a large bowl mix every thing together
place in refer for about three or four hour just to get cold
get some pita bread cut into eights place on platter and drive to the party and have a good time

Guacamole
Here is an easy and delicious recipe for guacamole.

Ripe Avocados - you need about 12 to 15 small ones for the size crowd you have. You can do with fewer avocados, if necessary.

When you cut them open, take out any brown spots, if any.

In a large bowl Mash up cut open avocados, pits and skin removed. Just scoop the avocado fruit out of their skin.

Add in fresh medium or hot salsa.
This is located in the regrigerated section of the market, avoid the bottled stuff.

Mash up, add small amount of salt and one or two ripe tomatos diced very small.
Add juic of Half a lemon

Mix well.

OPTIONAL:
Half a grated onion is optional as is two or three cloves of crushed garlic.

Serve with chips and or crackers.

DELICIOUS. Have a great party.

Platter from Port of Subs, I know yousaid not Inexpensive but
I thought I throw this in anyways it's an all meat/cheese,olives
of both kinds(black,green),yellow peppers platter. Price range
from 10-15 people $35.00 small, 15-20 people $45.00 medium,
20-25people $57.00 large.

Well check it out at your nearest Port of Subs if it something that
interest you. remember you don't have to purchase the most
expensive one. Everybody their will be taking something there
so it doesn't matter if it was enough. there will be plenty of other
foods to choose from. Have Fun..
