It can taste really good, it's cheap (the primary reason), and it's easily found. Take any one of those things away and it'd be less popular. Take two and no one would care about pasta anymore.
Most pasta is made with wheat and egg, sometimes with vegetable additives. While the egg is very good for you the gluten isn't so good for everyone. In some people wheat gluten produces an allergic reaction. At the least this reaction produces lethargy and problems concentrating. However, for many others wheat pasta is a very useful source of carbohydrates. Athletes make good use of this.
Rice-based pasta doesn't have this problem, but rice pasta in the US is harder to find and doesn't really appeal to US tastes.

Because there are so many varieties and so many things people can add, it is also easy to prepare in advance or to do a quantity.

Its filling, cheap, you can find it everywhere and tastes great!
And you can do so much with it, with different fillings and sauces
