I even found a food source for you. I know that some of the specialty foods can be found in Asian stores, that is where I find the ones that I need. I served in Panama for 2 years, and as a kid lived there for 3 years. Their favorite dish, which also happens to be a southern dish here is:
In a crockpot, cook 1 pound of blackeyed peas with a hamhock, and 5 cups of water with minced garlic, and 3 dried bayleaves.
Serve over white rice.
