Vegetarians do not eat meat or meat by-products.
There are several types of vegetarians, so I am just going to make this as simple as I can do. Some Vegetarians eat only fruits and vegetables; cooked an raw. Some will eat fruits, veg, eggs and dairy products( they are called Ovo Lacto vegetarians). Some vegetarians eschew dairy products altogether.
A lot of vegetarian diets rely on soy products for protein.
Vegans are very strict vegetarians who do not wish to harm living creatures. Vegans will not wear animal fur or leather shoes. Vegans will not eat dairy or eggs or any sort of anything that might have come near dead flesh. Vegan lifestyle is difficult to maintain but there are a lot of people who feel strongly about diet and the welfare of animals who do live in this manner. Some vegans will not eat refine sugar or flour or any refined foods.

Then there are the vegetarians who will only eat raw fruits and vegetables. There is whole new way to prepare and dry foods so they are palatable: it is almost impossible to gain weight on the raw food diet.

The Vegan lifestyle is living abolition in your daily life. An ethical Vegan's goal is ending of the use of animals in any form. So in a few words veganism is living without animal products because we think they are unethical.
Vegetarians just don't eat animals, including fish. They may, or may not have underlying ideology supporting these choices. Vegans always do, if not, most would refer to them as a Strict-Vegetarian.

This isn't as complicated as some would make it. Vegetarians do not eat meat -including seafood. Vegans do not consume any animal products. These include eggs, milk & cheese, honey, gelatin, whey, mono & diglycerides and a thousand other things. Most do not wear leather, fur, wool or silk.
One on a vegan diet would eat fruits, grains, vegetables, soy products, legumes, nuts, (egg free) pastas, and milks, cheeses, and ice creams made from nuts, rice or soy.
To say that such a diet is unhealthy is woefully ignorant. No diet is as dangerous to one's health as the typical American diet.

They are both the same in that they will not ingest animal flesh. Animal flesh is usually meat, but not just red meat, but also pork, chicken, and fish (the other white meats).
They differ in ingesting animal by-products, such as eggs, dairy (cheese, milk, yogurt, ice cream), and even honey. Vegetarians will eat animal by-products, while vegans will NOT eat animal by-products.

A vegetarian does not eat meat. This mean a vegetarian does not eat beef, pork, chicken, turkey, fish, etc. A vegan does not eat meat and any animal products. This means a vegan does not eat beef, pork, chicken, turkey, fish, etc. and milk, cheese, butter, honey, whey, gelatin, casein, eggs, etc. They both only use products not tested on animals and do not wear animal skins:leather, fur, wool.

The answer is truely quite simple.
You see, a vegan doesn't eat any animal produced foods and drinks. No milk, no eggs, no meat... and such.
While, a vegetarian eats no meat, but still drinks milk and can eat eggs.
