I was raised in a family meat locker and it's hard to get meatcutting out of you blood. I love old world sausage of all ethnic backgrounds and am looking for something new. (I mean old actually!) Polish, German, Italian, Swedish, anything you'd like to share. Please be serious and no wise cracks. Thanks!

Ler me clarify my question. I'm looking for recipes for making the sausages themselves. Not using the sausages in another recioe. Sorry for the confusion. Thank you all for the answers thusfar. They'll not go to waste, I promise.

ground meat with celery salt, sage, cayenne pepper, salt, pepper, minced onions, minced bell peppers, and finely minced potatoes.

This recipe is Italian. Depending on how much you want to make, 4 hot italian sausage links, 2 red peppers (diced), 2 tablespons of fresh fennel and about half and onion (diced) Take the casings off of the sausage, brown in a skillet with the fennel. In another pan, saute the peppers and onions. When both are about ready, combine them into one and mix well. Pour in some heavy cream, chicken stock and lots of parmesan cheese (to thicken), let it reduce and you're done.

i love sausage that u boil till its not pink no more add to a crock pot with tomato sauce and onion and green peppers and heat for all day and serve on rolls

I also love to grill sausage on george forman till crisp and serve with spinach lasagna and or any pasta with tomato sauce and mozzerella

love sausage links or patties with french toast or pancakes
