Vegetarian Soup Recipe #1:
Corn Chowder
Creamed corn - 1 can (300ml)
Frozen corn - 1/2 cup
Olive oil - 1 teaspoon
Potato - 1 (peeled and diced)
Small white onion - 1 (diced)
Celery - 1 stalk (diced)
Red pepper - 1/2 (diced)
Chili pepper flakes - a pinch
2% milk - 1/2 cup
Vegetable soup stock - 1 cup
Salt and pepper - add to taste
Heal oil to medium and cook the onions, potatoes, celery, red pepper. Add in salt and chili pepper. Cook for 3 to 5 minutes.
Pour in soup stock, and bring to a boil. Simmer for 8 to 10 minutes until the potato is soft.
Add in the creamed corn, milk, frozen corn, salt, and pepper. Let it simmer for about 3 to 5 minutes and serve.
Vegetarian Soup Recipes #2:
Tortellini Bean Soup
Cheese filled tortellini - 250g
Carrots - 4 (peeled and chopped)
White onion - 1 (chopped)
Tomatoes - 2 medium sized (diced)
Canned black beans - 1 cup (drained)
Minced garlic - 1 teaspoons
Dried basil - 1 teaspoon
Bay leaf - 1
Vegetable soup stock - 3 to 4 cups
Salt and pepper - add to taste
Vegetable oil - 2 tbsps
Heat oil to medium, and cook the carrots, onion, garlic, and tomatoes. Add in basil and bay leaf. Cook for 5 minutes until carrots are soft.
Add in soup stock, and bring to a boil.
Add in Tortellini, and cook on medium for 8 to 10 minutes.
Add in the beans and simmer for 2 to 3 minutes. Then serve.

Here's my family's Country Miso Soup recipe -- hearty, healthy and vegetarian, if your dashi is made out of just konbu seaweed. Great-grandmother passed it down to us before she died.
2 liters/quarts of water
2 large potatoes, peeled and diced
1 large carrot, peeled (or about 200 g. kabocha squash, unpeeled) and diced
200 g. of mushrooms (mix or match -- I recommend shimeji, enoki, shiitake for this -- you can leave 'em out, too)
1 yellow or white onion, diced
2 tsp. dashi (Japanese soup base -- or just use a 15 cm. long strip of konbu from the beginning)
1/4 c. miso paste (some contain dashi, so check the ingredients. Choose a different brand if it has fish, or you can not use the dashi if the miso dashi is OK. Should just be soybeans, salt and culture in it otherwise)
Wakame flakes or leek slices for garnish
Put diced potatoes and orange veggies in the water, bring to a boil and boil for at least 10 minutes. Add the diced onion and the mushrooms (sliced or seperated for easy chopstick eating), and simmer for 10 more minutes. The orange veggies should be tender. Put the heat on low, and add the dashi and the miso paste. (You should never boil it after you add the miso.)
Put into bowls, and while still hot, add wakame flakes (if using). Top with leeks (if using) and eat. This is usually re-heated and eaten during the day.

I think the secret to Western veggie soups is to properly brown the onions and carrots before adding the water. This adds a lot more flavor.

My personal favourite (very simple, easy, and nutritious):
For 2-3 people (on average):
1 vegetable stock cube (I like Massells [sp?])
1/2 large potato, cubed
2 handfulls mixed veges
3/4 cup of pasta (macaroni)
1 cup boiling water (fill the kettle - you will need extra)
1/2 can 3 bean mix
1. Boil 1 cup of boiling water, and dissolve the stock cube in it
2. Place all other ingredients in medium sized saucepan, pour stock-water over
3. Pour the remaining boiled water into the sourcepan until the ingredients are covered by 2-3 cm
4. Boil on medium heat until pasta is cooked
(This is the basic soup i like to cook - very easy and you can change whatever you want)
