stir frys are the easiest and among the most economical way to throw together a quick vegetarian meal. Just take some of that produce you've been meaning to use up, throw it in a wok or skillet with some olive, sesame or peanut oil. Add a little tofu for protein, some herbs and spices of your choice, and VOILE! If you have extra time make a quick grain like rice to go with.

Okay, so. For breakfast, I eat oatmeal, cut up bananas, kiwi and toss in some grapes for a fruit salad, banana mashed on toast or maybe do a tofu scramble if I really want something hearty. Also, pancakes. I adore pancakes. For lunch, I pack hummus and cut up veggies or crackers, soup or chili I keep in the crockpot so it's ready when I run out the door, peanutbutter or veg sandwiches (avocado makes an amazing, delicious mayo substitute) or salads. If we go out for lunch, I just sub out the animal products or skim the menu for what they might have in the kitchen and request a creative dish, like a rice bowl or something. People are normally willing to work with me if I'm nice. Dinner is soups, always. Love soups. Stir-frys, curries, tacos (beans, rice, veg, salsa and guac,) burgers - there are loads of veg recipes out there, lentil and pea burgers are good subs. Sometimes I'll roast some acorn squash and eat it with quinoa or make pasta with a veg marinara. The possibilities are endless.

I listed the website I found dishes such as: Soups, Grain Dishes, Entrees and Desserts. They all seem pretty cheap. If you have some extra time I would suggest the Risotto, it is very hearty. Items such as the pizzas and sandwiches that are vegerarian listed under the newly added recipes can be frozen for later unthawing, packing, cooking and consumption. The Spinich and Strawberry Salad sounds really tasty. If ever in doubt just Yahoo search it, ( I searched 'vegeratian recipes')

Also a vegetarian...
Casseroles are great.
Buy lots of noodles and rice, add cheese or vegetables, or whatever.
Peta2 has some great recipes.
There's a great cookbook called "Student's guide to vegetarian Dinners' or something of that sort, if you can find it it's great.

If you can get soyrizo in your market, do tacos. This takes about 30 minutes to prepare.
1) corn tortillas
2) cotija cheese
3) soyrizo
4) fresh pico de gallo salsa
(tomato, onion, cilantro, lime, jalapenos, salt)
A) Heat a tablespoon of corn oil in a skillet over medium heat. Remove soyrizo from plastic and fry in skillet, breaking up the soyrizo as it fries. Fry until it is a medium brown, not blackened.
B) While the soyrizo is frying, chop tomatoes, jalapenos, cilantro and onions to make the salsa. Proportions depend on your personal taste. Add lime juice and salt to taste as well.
C) Shred the cotija cheese.
D) Once the soyrizo is ready, remove to a bowl. Place tortillas, one tortilla at a time in the hot skillet. Flip them occasionally, remove them when they are soft.
E) Assemble tacos from the ingredients and enjoy!
PS:
Black beans cooked in lime, saltwater and tequila are a fine side!
