It sounds pretty straightforward. Just saute up your sausage by slicing open the skins and just frying up the meat. Break it up into bits w/ a wooden spoon to cook it evenly.
Remove sausage from pan & set aside to cool. In same pan, in same fat, add a little olive oil & saute some fresh chopped garlic & onion, and add a pinch of hot pepper flakes.
In a large bowl, combine sausage onion & garlic, all cooled, fresh chopped parsley, ricotta cheese, parmesan cheese and a little mozzarella, and about 1/2 tsp. of grated nutmeg. Add a beaten egg to everything if you need it bound together better. Mix all well.
Meantime cook canneloni or manicotti shells & let cool. Stuff w/ mixture from bowl. Arrange in a buttered baking dish & top w/ marinara sauce. A really cool thing to do also is to mix up a bechamel and pour that on top, too. It's so easy. Just melt 4 tablespoons of butter, sprinkle in 4 tablespoons of flour, whisk together for 2 minutes while allowing the flower to cook. Then whisk in 5 cups of WARM WHOLE MILK, add salt and pepper, whisk some more, cover and put on low for about 7 minutes or until thickened. This white sauce adds a silky quality to your dish. Goes great along w/ the red sauce, too.
Top everything w/ some more shredded mozzarella & parmesan, then a few dots of butter to brown the top. Bake @ 350 for 35 minutes or until everything is bubbly. ENJOY!!

Manicotti
14 uncooked manicotti shells
1/2 pound bulk Italian sausage
1 1/2 cups meatless spaghetti sauce
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon pepper
DIRECTIONS
Cook manicotti according to package directions. Meanwhile, in a skillet, cook the sausage over medium heat until no longer pink; drain. Stir in spaghetti sauce.
Drain manicotti and rinse with cold water. In a bowl, combine the ricotta cheese, 1/4 cup of mozzarella cheese, Parmesan cheese, Italian seasoning, garlic powder and pepper. Carefully stuff manicotti. Place in a greased 11-in. x 7-in. x 2-in. baking dish. Top with sausage mixture.
Bake, uncovered, at 350 degrees F for 30-35 minutes or until heated through. Sprinkle with remaining mozzarella. Bake 3-5 minutes longer or until cheese is melted.
