My grandmother was diagnosed with diabetes earlier this year and I would like to make her an apple pie for Thanksgiving since it is her favorite. I am not having much luck finding one that includes the pie crust as well as the filling. She said that she would just eat the filling, but I would love for her to be able to enjoy the whole thing. If anyone knows a recipe or a site or book that has one please let me know. Thank you so much.

You can crush up almonds or pecans or walnuts finely to make a crust. Mix with butter and splenda, then press into a pie pan and toast at 325 degrees for 10 minutes before cooling and filling with your pie filling.

as far as the crust goes you do have to watch that . It is a lot of flour which is a carb. I use whole wheat, or if I use white I only use unbleached. I use splenda in the pie. I am A type 1 diabetic but my husband has 2 friends that are both type 2 's. I made them each an apple pie last year for x-mas gifts they loved them said it was the best they ever had. Now they pay me to make them for them.. All I do different is use splenda. Get a bag check the bag for the recipe make sure it is just splenda there are two types, 1 w/ just splenda, the other is 1/2 splenda 1/2 sugar (that is the one I use some diabetics can handle the 1/2 & 1/2 -it bakes better) My favorite is an apple crips (no crust) with an oatmeal topping

I am writing to tell you what an incredible impact these methods had on my life! I have had type 2 diabetes for 27 years. there is no sugar in the crust so dont worry about that, she shouldnt have the carbs but one piece wont kill her, simply leave out sugar and put in the ammount of splenda that it suggests on the bag as a replacement for the ammount of sugar. there are carbs in the crust but if she leaves out eating potatoes or noodles or sweetpotatoes, she can easily enjoy a normal pie crust. hugs to ya. you can look up diabetic recipes on the web by just putting that in a web search, good luck

Do granny a favor. Make her some nice baked apples with Cinnamon and margarine. They are great and she won't miss the crust, trust me.
