6 large firm tomatoes
50g unsalted butter
1 medium onion, finely chopped
5 tbsp oil
1 tsp fresh giner finely chopped
1 tsp fresh garlic crushed
1 tsp salt
1tsp pepper
1/2 tsp garam masala
450g minced lamb
1 green chilli chopped
fresh coriander

Preheat the oven to 180deg c/350 f/ gas mark 4. Rinse the tomatoes, cut off the tops and scoop out the flesh.

Grease a heatproof dish with 50g butter. Place the tomatoes in the dish

Heat the oil in a pan and fry the onion until golden.

Lower the heat and add the ginger, garlic, pepper, salt and garam masala. Stir fry the mixture for 3-5 mins.

Add the minced lamb to the pan and fry for 10-15mins.

Add the green chilli and fresh coriander leaves and continue to stir-frying the mixture for 3-5 mins.

Spoon the lamb mixture into the tomatoes and replace the tops. Cook the tomatoes in the oven for 15-20 mins.

Transfer the tomatoes to serving plates and serve hot.

This makes a great starter or supper time snack the mince can be made in advance. You could also try using red or green peppers, marrow in fact any veg that can be stuffed.

Yep, Panner Tikka Masala ...
Go to Tescos and buy a pack of Paneer (Indian Cottage cheese) and a jar of Sharwoods Tikka Masala sauce.
Cut the paneer into cubes and fry it in a little oil,
Add the sauce (you may want to water it down a bit) - bring it to the boil, cover and simmer for around 10 mins.
Add some peas, allow them to cook in the sauce for about 3 minutes,
serve with rice and nans ... it's yummy!

Mince 4 cloves of garlic and an inch of ginger. Finely chop one onion. Fry together. Add tablespoon ground coriander, tsp ground cumin and 1/2 tsp turmeric. Fry gently for a few mins. Add minced meat (lamb or beef. Lamb is best) fry til it has lost its pinkness. Add a tin of tomatoes. Simmer 5 min Serve with rice and an Indian bread

boil some lentils for an hour or so (green/red/brown will do) with a 1 or 2 whole green or red chillies, some corriander seeds and some ground cumin.
Add salt, fried onions and garam masala. Eat with pitta breads, rice or naans. Scrummy!

Palak paneer with naan

recipe for palak paneer

Ingredients
250 GMS Spinach
2 chopped Onion
1 tsp. each of garlic- ginger paste
1/2 cup diced tomatoes
2 chopped green chilies
2 tbsp. oil or butter
1/2 tsp. garam masala
1/2 tsp. turmeric powder
1/2 tsp. red chili powder
250 GMS fried paneer
3-4 tbsp. Cream
Salt according to taste

Method
1. Wash and clean spinach. Cut into big pieces.
2.Add a pinch of salt and boil it in minimum water for 8-10 minutes. Remove from heat and cool.
3.Make a soft paste of spinach in a blender.
4.Heat oil and add ginger, garlic, green chili and chopped onions, sauté till light brown.
5.Add diced tomato and stir. Add salt, red chili powder, garam masala and turmeric powder. Mix well.
6.Boil for 2-3 minutes till it is of thick consistency.
7.Finally add fried paneer cubes just before serving. Garnish with cream and serve hot.

recipe for naan

Ingredients
1/2 kg Maida ( all purpose flour)
1/2 tea spoon soda/ baking powder
1/2 cup Curd
1/4 spoon sugar
1 no. Egg
1 cup Milk
2 tsp. Onion seeds
3 tsp. Oil
Salt According to taste


Method
1. Sieve flour with baking powder and salt. Mix sugar, egg, milk and water. Knead it well into a soft dough. Apply a little oil and cover it with a wet cloth for two hour. It will come up very nice.
2.Now make equal sized balls apply a little oil and put onion seeds on top. Roll it into a round shape.
3. Stretch it from one side to give a triangular shape.
4. Now put it on a preheated Tandoor wall or cook in a preheated oven (250 degrees Celsius) by placing it on a greased tray.
5. Remove when it is crisp and golden brown on both sides. Serve hot topped with butter.
