hi I'm a chef is Sussex and use a chocolate fountain every weekend in our buffet,looking at the answers you have got so far only one has really hit the nail on the head!
you must add a little veg oil or ground nut oil to your chocolate this will change the structure of the product and make it flow.we use a cooking chocolate like coco block as it contains oil.
supermarkets sell cooking chocolate which is very sweet.
top tip! never add water to melted chocolate it will go lumpy.
also if you are making a large amount of melted choc.use a slow cooker on low setting,its great and doesn't need constant attention.

chocolate buttons, or something of this size works best as it's quick to melt. nothing bigger than 10 (uk)pence or a 25 (usa)cent coin.
i'd personally reccomend cadbury's (but i'm biased... lol) dairy milk works too aslong as you break it up first.
supermarkets are the cheapest, tesco's own is quite nice. just remember that chocolate does change flavour slightly when melted.

use some store bought hershy's milk chocolate candy bars and break them then melt.you can buy it at your every day average grocery store.
