I need something that can feed about 4 people. Not something too complicated please!

Chicken Parmesan! So easy!

Boneless, Skinless Chicken Breasts
Italian Bread Crumbs
Sliced Mozzarella or Provolone
Egg

Pound chicken breasts to flatten and tenderize. Dip in beaten egg. Dredge in bread crumbs. Pan fry in a little veggie oil (olive oil doesn't get hot enough). Put sliced cheese on top and cover until melted.

Serve over angel hair or spaghetti with a good jarred sauce (I like Classico) and sprinkle with fresh grated Parmesan.

Chicken Parmesan is always good and easy...I'd do 8 boneless chicken breasts pounded to about an inch thick, salt and pepper, maybe a bit of Mrs Dash's Italian Blend, coat in seasoned bread crumbs (some salt, pepper, grated Parm cheese, fresh chopped parley), then over med high heat, cook 3-4 at a time-don't crowd the pan-about 2-3 minutes each side till golden-pour some sauce into the bottom of a glass baking dish and layer the chicken, then mozzarella cheese and place into a low oven till spaghetti cooked; put on broil for a minute or 2 till cheese melts when pasta's ready!

I have loved cooking since I was very young (14). After 13 years I have tried all sorts of cuisines and recipes and Italian has always been a favorite of mine.

Here'r a recip for """Chicken Cacciatore""""""", it's easy, fast, healthy, and a perfect recipe for four people:

2 large chicken breasts, cut into 1 inch cubes
1/2 cup olive oil
1 large can of diced or whole tomato 28 OZ
1 tspn dried basil or a hand full of fresh basil (you can be generous with the fresh basil)
1 tspn italian seasoning
10 mushrooms, sliced
salt and pepper to taste
2-3 cloves of Garlic (you can add more if you like)
1/4 cup (I usually put more) of cooking sherry or you can use the white wine of your choice
Pasta of your choice 12 OZ
Parmesan cheese for garnish

Heat the oil (high heat) and to that add the chicken till it's golden brown. Add the mushrooms and saute for about tow minutes. Add the garlic and saute for a few seconds. Add the tomatoes, salt, pepper, italian seasoning, basil (only if it is dried, if it's fresh basil ad it at the end, right before you serve your sauce). Reduce the heat to low and let it cook for 30 minutes.

Meanwhile you can cook your pasta and set aside.

After 30 minues, add the sherry and let it cook for five more minutes. If you have fresh basil, chop it and after 35 minutes turn off the stove and then ad the basil leaves and stir in the sauce.

Pour the sauce over your pasta and mix well and sprinkle with parmesan cheese.

This pasta is really easy but very tasty, all together will take one hour to make it.

PS: You can make this without the mushrooms, it wasn't in the original recipe but I added it myself and people liked it more.

Spaghetti Alla Carbonara

Ingredients
1 pound of spaghetti
3 tablespoons of olive oil
3 eggs beaten
1/2 cup Pecorino Romano cheese
1/2 pound pancetta or bacon
Salt to taste
Freshly cracked pepper

Preparation
Bring 4-5 quarts of water to boil in a large pot. In a large skillet cook pancetta or bacon in oil until crisp. Add a pinch of salt to boiling water. Place the pound of spaghetti in the water and cook according to the directions on the box for spaghetti that is al dente. In a bowl beat three eggs, cheese and ground black pepper. When the pasta is done you want to drain it and add it to the skillet with the egg mixture and toss the ingredients to ensure everything is thoroughly mixed. Serves 4

This makes a great entree, especially when accompanied with garlic bread and a Caesar Salad

Pasta Bolognese

1 lb package of pork mince
3 pieces of bacon chopped
1 onion chopped
4 cloves of garlic chopped
4 pieces of celery chopped
2 carrots chopped
package of mushrooms sliced
½ red pepper chopped
½ yellow pepper chopped
six plum tomatoes chopped
three cans chopped tomatoes
1 glass red wine
beef bouillon cube (stock cube)
2 large glasses of water
2 Tbsp balsamic vinegar
2 Tbsp Worcester sauce
½ cup milk
1 lb Cooked Pasta, your choice

Brown the pork and bacon. Drain in a sieve. Add oil to pot and soften, onion, garlic, celery. Then add the mushrooms and peppers and allow them to soften. Add the carrots and coat with the oil. Add the plum tomatoes and return the meat. Next add the cans of tomatoes and plenty of basil, oregano and salt and pepper. Allow this to heat through for about ten minutes. Next add the wine, balsamic vinegar and Worcester sauce, beef cube and water, combine. Allow to simmer on a low heat for about two and ½ hours. Add the milk and simmer for another ½ hour. Serve over pasta and toss with mozzerella cheese

Spaghetti Aglio, Olio and pepperencino
(Spaghetti with garlic, oil and red pepper flakes)

This is my favorite dish when I am in Italy.. You boil either linguini, spaghetti or angel hair. You take a pan and add extra virgin oil a good enough amount to coat the pasta, several tablespoons of minced or chopped garlic and several shakes of dried red pepper flakes.. after pasta is done and drained, drop the pasta into the oil and stir it around and coat the pasta and serve.. Very flavorful and spicy.

simple food is authentic Italian spaghetti oilo and a good steak. for the spaghetti 1 whole head of garlic miced fine around 1 1/2 cup of olive oil use your favorite cook 1 lb of spaghetti in salted water heat your olive oil in a frying pan add garlic an a couple of pinches of crushed red pepper cook garlic til it just starts to change color to a light brown strain the spaghetti don't rinse it put it in a bowl now pour oil thru a fine strainer into the spaghetti toss and your done cook the steaks the way you like them but I like to add garlic salt to them for a really garlic night... by the way the spaghetti cost like $9 a plate in Italian restaurants

I love veal tosca. It's scallopine that is dipped in a mixture of egg, parmesan,dijon mustard and cream and fried in olve oli then finished with lemon juice and sherry. Only takes about ten minutes to fry. Keep in a warm oven until ready to eat but not longer then about 15 min.

you cant go wrong with a chicken cutlet parm.....basics...egg and bread crumb chicken cutles....fry them ..not too dark....then align them in a pyrex dish...ladel ur fav tomato sauce on top over each piece...dont be stingy! put it on there...then crumble mozzarella over the top then bake at atleast 350..just until the cheese melts....very simple...then serve with a nice salad..vinegar n oil of course....and u cant eat this without italian bread! MANGIA MANGIA! this shouldnt take more then an hour to prepair given u have everything to start with... good luck
